I use either cornstarch or flour. Sometimes, adding twice the amount of flour doesn't work. Could the amount of salt in the meat broth have any effect on thickening? Answer: Salt would have an effect if your gravies were as salty as the Great Salt Lake, which I'm sure they're not. But there are several other possible mistakes. One, you may be leaving too much grease in the broth, in which case the cornstarch granules are surrounded with "raincoats" of grease, preventing water from entering and swelling each granule. Stocks should be thoroughly before being thickened. Two, you may not be bringing the gravy to a boil and simmering it for 10 minutes. Enough heat must be applied to give all the starch granules a chance to swell, absorb water and thicken the sauce. Three, you may be overcooking your sauces. Keeping them at the boiling point for more than half an hour will cause the starch polysaccharide chains to split. The gravy will become liquid once again. Four, you may have too much lemon juice, vinegar or wine in the sauce. Acid will also split the polysaccharide chains of starch. Five, you may bje adding the flour or cornstarch to the boiling liquid. In this case, many lumps will form and the gravy will not thicken. To add flour or cornstarch dissolve it first in water, then pour while whisking into the boiling stock. Six, you may be adding the flour or cornstarch to cold stock. Most of it will then fall to the bottom, stick and scorch while you are heating the gravy to boiling. Question: Could you please give me a recipe for whipped butter?
