Although yeast breads take a bit longer to prepare, their fragrant aroma and superior flavor make them well worth the extra effort. A refreshing touch of citrus blends through this bread's egg batter, complimenting the tangy taste of raisins and fruit. It also makes a thoughtful gift with a personal touch. p STOLLEN CHRISTMAS c. golden raisins c. mixed candied fruits 3 T. brandy or rum 1 pkg. active dry yeast Zhi to 3 c. flour Vt c. milk Vb c. butter or margarine Va c. sugar Vi t. salt 2 eggs, beaten 2 t. grated lemon peel Vs c. chopped blanced almonds Melted butter and sugar, for filling Powdered sugar 1 V Combine raisins, fruits and brandy; let stand one hour or overnight. In mixing bowl combine yeast and Vz cup of flour; set aside. In saucepan combine milk, butter, sugar and salt; heat to lukewarm. Stir into yeast mixture; beat with electric mixer 2 minutes. Add eggs and peel; beat to blend well. Mix in brandied fruits, almonds and enough of the remaining flour to make a soft, y dough. Knead on floured board about 5 minutes, NECTAR GLAZED APRICOT CAKE until dough is smooth and elastic. Form into ball, place in greased bowl, cover and let rise in warm place until almost double in bulk, about 1 hours. Punch down; let rest 10 minutes. On floured board oval. roll dough to an 8xl2-inc- h Brush with melted butter; sprinkle with sugar. Fold dough in half lengthwise to within Vi inch of opposite side. Press closed. Transfer stollen to greased baking sheet; curve ends slightly to form a crescent shape. Cover loosely with towel; let rise in warm place until almost double in bulk, about 45 minutes. Bake in 375 degree oven about 20 minutes, until golden brown and crusty. Cool slightly; sprinkle with powdered sugar. Cool completely, then dust once again with sugar. Serve slices plain or toasted. To store stollen, wrap securely in plastic or foil. Makes one stollen. inpkg. Spoon batter into buttered muffin cups, filling full. Bake 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Carefully remove from pan and cool completely on wire rack. For glaze, combine sugar, eggnog and vanilla; mix well. Drizzle over top of cakes. Decorate with cherries and nuts.
