Show This Week's RECIPE. . . Try the following pineapple fritter frit-ter recipe for a meat accompain-ment accompain-ment or even dessert. Mrs. Jack Stevenson, who submitted the recipe, stated that her family enjoys en-joys them especially with baked ham. PINEAPPLE FRITTERS (serves 4) 1 cup sifted flour Vi tsp. salt 1 tsp baking powder 1 cup drained crushed pineapple 1 tbs. sugar 1 beaten egg V4 cup milk 1 tbs. melted shortening Fat for deep frying all measurements level) Combine flour, salt, sugar and baking powder in bowl. Mix together the beaten egg, milk, melted shortening and pineapple. pine-apple. Lightly stir into dry ingredients. Do not overmix. Drop from a teaspoon into deep fat, heated to 365 deg. F. (or when an inch square of bread browns in 60 seconds). If teaspoon is dipped into fat before dipping into fritter batter, the batter will slip off the spoon more easily and the fritters will, have a more uniform shape. Fry until brown and cooked in center (3 to 5 minutes). Drain on absorbent paper and sprinkle with powdered sugar if desired. |
