When the Grubsteak restaurant opens this June, Prospector Square will have its first restaurant, and it will be unlike any other in Park City. The unique establishment, located across the street from the Park City Learning and Cultural Center, offers a standard theme, a steak house, but with several new twists. The most visible innovation is the idea of putting the cook in full view each customer can see his or her steak on the grill cooking while they mill around the salad bar. The cocktail lounge will also be a little different. Bartenders will preside in an area sunk below the rest of the room so you can look them in the eye without standing -up, and suspended above them will be the stage where live entertainment will perform. Also included in the building will be a 320 seat banquet hall, which will service groups using the Learning Center, as well as anybody else who is interested. Designing the restaurant has been a "challenge" for manager Francois Picaud, who comes to Park City familiar with a different kind of resort life since he is a native of Chamonix in the French Alps. Picaud has made some changes in the original plans, which include a 24-hour coffee shop and much smaller banquet room. Now, he says, the space will be used much more efficiently. Picaud brings much experience to the Grubsteak. After working in resort restaurants and hotels in France, he came to the United States in 1960 to teach skiing at Squaw Valley and learn English. He returned to France and a job as a maitre d', but missed America and came to California a year later, where he found a job with the Fred Harvey restaurant chain. After four years, he wanted to start a restaurant of his own, but instead ended up opening a ski shop in Beverly Hills. Picaud later was Vice President and General Manager of the Mt. Snow, Vermont, Hotel Corp., and for the last two years has been General Manager of Sherwood Hills resort south of Logan, Utah. Francois Picaud |
