The Stucki's, along with friends Joan and Than Larsen, prepared and served nearly 500 servings of hamburger stew and peach cobbler. You, too, can enjoy outdoor Dutch oven cooking. Award winning recipes CONTINUED FROM PREV. PAGE Eggs and one-half of milk required for mix Bring fruit to a boil in Dutch Oven. Mix yellow cake mix quite stitl using half the liquid for a cake. Spoon over boiling fruit. The mix will absorb some of the extra syrup while cooking. Cover, place on a light bed of coals with a heavy layer of coals on the lid to brown. Cooking time about 20 minutes. Serves 6-8 small servings. DUTCH OVEN POTATOES 12 potatoes peeled and sliced (1person) 6 onions peeled and diced (one-half per person) Vi lb. sliced bacon cup water Salt and pepper to taste Place 14" Dutch ov en on a hot bed of coals, when hot enough to sizzle water, add bacon and cook slightly, (ora lot if you like it that way) add water and then the potatoes and onions. Mix these together lightly and then cover with the lid. Top lid with coals. Check occasionally and stir from the bottom with spatula. Cooking time 40-45 minutes. Serve hot. GRANDMA'S MEATLOAF Wi lbs. lean ground beef Vi lb. lean ground pork ,2 onions chopped 3 eggs 1 cup bread crumbs V cup milk , Vz cup celery chopped - V cup catsup Mix all ingredients together. Form into a loaf shape. Place in center of the oven. You can pour 1 cup cream of tomato soup over it. Don't use too much heat on the bottom, just enough to help cook it. Put must of the heat on the top. It will cook in about one hour. Check it. Make sure it's okay and looking like it should. Serves 8-10 people. DUTCH OVEN CHICKEN 2 chickens (cut into pieces desired) Flour Seasonings Wash chicken. Coat in flour and seasoning mixture. Do this by putting flour and seasonings desired in a sack. Add the chicken and shake. Add about Vi inch of oil in the bottom of the Dutch oven. Put chicken in oven and brown chicken on all sides. Cover and simmer till tender. Put heat on top as well as the bottom to cook faster. |
