Show Make Yuletide Coconut Balls This recipe for delicious Christmas coconut snowballs will make two dosen cskes. 1 2-1 cups sifted cake flour, 1H teaspoons double-acting baking powder, 1-1 cup butter or other shortening, 1 cup granulated augar, 2 eggs (well beaten), H cup milk, 1 teaspoon lemon or vanilla va-nilla extract, 1 ran moist, sweetened sweet-ened coconut-Sift coconut-Sift flour once. Measure. Add baking powder and sift together three times Cream butter thoroughly. thorough-ly. Add sugar gradually and cream together until light and fluffy. Add eggs, then flour, alternating with milk, a small amount at a time, and beating after each addition until un-til smooth. Add flavoring. Turn into greased cupcake pans, filling them two-thirds full. Bake In moderate oven (375 degrees F.) 20 minutes, or until done. Cool. Cover each cake with seven-minute frosting and sprinkle thickly with moist, sweetened sweet-ened coconut. Arrange on large platter and Insert a smsll twig of evergreen or csndle holder with tiny red csndles in each cake. (Light candles just before serving.) SEVEN-MINUTE FROSTING egg wnues lunoeaicm, in cups granulated sugsr, 5 tablespoons table-spoons water, 1 teaspoons light corn syrup, 1 teaspoon vanilla-Combine vanilla-Combine egg whitea, sugsr, water, and corn syrup in top of double boiler, beating with rotary egg beater until thoroughly mixed. Place over rapidly boiling water. Beat constantly with rotary egg beater and cook for seven minutes, or until frosting will stand In peaks. Remove Re-move from boiling wster. Add vanilla va-nilla snd best until thick enough to spresd. |
