Not long ago the tomato catsup makers were called to time. It was found that most of the factories In the State and several of the foreign makers of this condiment were working off an Impure article. . . One of the most noted caL?up makers In the' country was forced to withdraw his goods from Uie Utah market and substitute, for the Impure article, a high-grade catsup that is everywhere conelderrd standard. In all there were four carloads of Impure catsups shipped from Utah to Idaho and other State that do not have a pure food law. Catsups are sometimes made from pumpkins and squashes and colored with analine or coal tar dyes. Some of these adulterations are to be found in the State, but the bottles are labeled. "Thiu bottle contains analine or coal tar dyes." Beware of nuch goods. Olive oils are often adulterated. The department made an analysis of twenty sample and five of these were made from-cot tonjed oil. Canned goods are a source- of much annoyance. Peas, for Instance, are colored a hrlgnt freh green by uHng a copper solution. Fruitu of different kinds are brightened with' chemicals. Utah's pure food inspector are poorly paid and cannot make so thorough an inspection of food as the public health demands, but they are vigilant and aro doing a jaenrJce for the people that is not generally understood nor appreciated. appre-ciated.
