Powdered sugar can be sprinkled on the wax paper to prevent sticking. Note: The above recipe can also be used for popcorn balls or caramels. When making caramels, cook to a hard ball stage and pour into a greased 8 inch pan. Mark in squares when partially cool. Cut when cold, and wrap individually. Chili Cover 3 cups dry red or pinto beans with water, add 2 tsp. salt. Bring to a boil, and simmer. Add water as needed. Cook about 8 hours or until done. Prepare sauce: Vh lbs. hamburger 1 small onion, chopped 1 Tb. chili powder 1 tsp. paprika 1 qt. tomato juice Brown the hamburger and add onion. Add spices and juice and simmer for 30 minutes. Add this mixture to the beans and cook together for 1 hour. Pumpkin Cake V2 cup shortening lVi cup sugar 2 eggs tsp. nutmeg Vz tsp. ginger 3 tsp. baking powder 2 cups flour V2 cups nuts M t. cinnamon 1 tsp. salt Combine shortening, sugar and eggs and cream together. Combine dry ingredients. Costume prize winners walked " away with delicious caramel apples and everyone received caramel nopcorn balls. This was the beginning of the !i Kallween season for many children. Halloween is a time for decorations, food and fun for everyone, children, teens adults. and More and more people dress up for work in public places and it is not considered a childrens holiday anymore. A big part of Halloween is trying to decide what to wear, hours are spent in decisions and designing just the right costumes as you take on a new identity for a day or evening. Halloween will be celebrated in various ways at school, church, in the neighborhood and special parties. Orange and black are the colors used for the holiday season. Orange is a symbol of the golden harvest while black depicts demons and the dreary winter. The celebrations, costumes, and decorations will all come to an end as the neighborhood youngsters come knocking at the door on Halloween night. It is a lot of fun for the ghosts and goblins to gather treats around the neighborhood and head for home to spread out the valuable collection of goodies. The pumpkins will suddenly lose their glamour after burning a few hours in the night. They will be tossed aside but the memories of preparing for Halloween will be long remembered. Some favorite Halloween memories are the foods associated with the season. Family favorites are given below. Caramel Popcorn Balls 2 c. brown sugar c. corn syrup 1 cube margarine 1 gallon popcorn (popped) Bring first three ingredients to a boil, let cool one minute, and pour over a gallon of popped corn. Form into balls. Gingersnaps l'i c. shortning 2 c. sugar 2 eggs Cream thoroughly, Add: 1 c. molasses 5 c. flour 1 tsp. salt 2 tsp. ginger 4 tsp soda 1 tsp. cloves 2 tsp. cinnamon Mix well, roll in little balls and mash with a glass dipped in sugar. Bake at 350 deg. about min. Pumpkin Cookies 2c. sugar 2 c. shortning 1 16-o- z can pumpkin 2 eggs 2 tsp. vanilla 4 c. flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 tsp. nutmet V2 tsp. allspice 2 c. raisins 1 c. nuts Cream sugar and shortning, add pumpkin, eggs and vanilla. Beat well. Sift together flour, baking powder, soda, salt and spices. Mix together, add raisins and nuts. Drop on cookie sheet and bake at 350 deg for about 10 min. Caramel Apples 1 c. sugar c. corn syrup (dark or light) Vz c. butter 1 c. light cream Combine sugar, corn syrup, butter or margarine, and 2 c. cream. Bring to boil, stirring constantly. Add remaining V2 c. cream slowly while stirring. Cook slowly to a soft ball stage. When dropped in cold water, the caramel starts to hold its shape. Remove from heat and dip apples PGHS counselors attend conference Two student counselors from Pleasant Grove High School at-tended a conference at the University of Utah last month, Mark Bezzant and Aleen Rowley. The conference, on Sept. 12, was an annual gathering of high school counselors and principals from Utah, Idaho, Wyoming and Nevada who received information about University policies and practices of interest to graduating seniors. Jay Comras of the National Association of Secondary School Principals spoke at the conference. He compared the Scholastic Ap-titude Test (SAT) with the American College Test (ACT), both of which are used by colleges to select freshman applicants. The ACT is given to students in Utah.
