Show QGDEN PEOPLE AT THE LOGAN COLLEGE GATHERING Logan, Jan. 28. It was action rath er than talk at the roundup today, the time being given over to demonstrations demon-strations in farm butchering. A big crowd of farmers assembled at the stock pavilion In the morning and witnessed the killing of a steer, a hog and a sheep by Stephen Hall-stone Hall-stone and Joseph Reading, local butchers. butch-ers. The three animals were killed and dressed in a little more than forty minutes and then a general discussion of farm slaughtering was held. The meat thus obtained was cut up at a joint session of the roundup and housekeepers conference held this afternoon The cutting demonstration was conducted con-ducted by William P. Madsen of the Ogden Packing company and A. If. Miller, Jr., of the Washington market In Ogden. Professor John T. Calne III talked briefly on types of bee! cattle, showing by means of lantern slides the different varieties of meat-producing meat-producing cattle. For the benefit of the housekeepers, he also explained the cause of dear meats a world shortage of meat-producing animals. Miss Agnes Saunders discussed cooking and food value of meat cuts and she indicated how the economical housekeeper may provide her family with as much nutrition from cuts that are cheap as from those that are ex pensive. The different cuts of meal were compared and the amount of waste in each calculated, the net cost being figured from that. Veal cutlets and round steak show least waste, but bacon is perhaps the cheapest meat obtainable for general use. Governor Spry and perhaps forty members of the legislature will be here on Saturday and a big meeting will be held in the college chapel at that time. |
