Show Home Agent Offers Methods To Get Most From Garden Lucille Proctor Utah State University Uni-versity Home Economist for Garfield County has announced several ways that this year's home canning and preserving can prove to be safe as well as rewarding in getting get-ting the most out of gardens. "It's time once again to start getting ready for home food preservation," preser-vation," she says, "canning, freezing freez-ing and dehydration." She recommends recom-mends a few things to remember so that home canned foods will be nutritious nu-tritious and safe for the family to eaL "Keep up with the latest information," infor-mation," she advises. "New metrK ods are being developed. Modern hybrids of fruits and vegetables require re-quire different processing times and methods." She suggests following tested recipes. Experimenting with canning can-ning recipes may be playing Russian Rus-sian roulette with the family's health or life, she notes. Only recipes that have been scientifically tested should be used. Good sources for tested recipes are U.S. Department Depart-ment of Agriculture handbooks, USU Extension, Ball or Kerr Home Canning guides. Be sure and follow instructions exactly. It is important to make altitude adjustments for all recipes, especially espe-cially in Garfield County because of its high altitude. Home canners should test pressure pres-sure canners before each canning season. The gauges need to be checked for accuracy and condition of rubber gasket, rings and safety plugs for good quality. Testing of canners can be done by USU Extension Service in Garfield County. Proctor will provide pro-vide this service throughout the county the last week in June. Home canners need only to bring pressure cooker lids to be tested to any of the following locations: Tuesday, June 28 at the Boulder LDS Chapel from 10:30 until 11:30 a.m.; on Tuesday, June 28 at the LDS Chapel in Escalante from 1:30 until 3 p.m.; on Wednesday, June 29 at the Senior Citizens Center in Henrieville from 10:30 until 11:30 a.m.; on Wednesday, June 29 at the LDS Chapel in Cannonville from 9 until 10 a.m.; at the Tropic LDS Chapel on Wednesday, June 29 from 1 until 3 p.m.; at the Hatch LDS Chapel on Thursday, June 30 from 9 until 1 1 a.m.; and on Thursday, June 30 at the Extension office from 1 until 3 p.m. |
