Show The' Summit County' Bee Friday 'Dec6fabfer' Christmas With David and Leslie Swank Coconut-Peca- n Icing C. evaporated milk 1 C. sugar 3 slightly beaten egg yolks 12 C. butter 1 tsp. vanilla C Baken flake coconut 1 C. pecans, broken into pieces 1 1-- 13 Combine the evaporated milk, 1 C. sugar, 3 lightly beaten egg yolks and 12 C. butter and vanilla in a sauce pan. Cook over medium heat until thickened. Remove from the heat and stir in the coconut and pecans. Cool until thick enough to spread. CHRISTMAS TREES Fresh-C- ut Pinion Assorted Sizes The Christmas of 1980 happened to be David and Leslie Swank's first Christmas together and a time of preparation for their January, 1981 wedding. As the two families got better acquainted, the jokes developed, while memories grew. Each gift presented was either seriously meaningful or funny. Since the couple were scraping every extra dollar for a trip to the Washington, DC LDS Temple together, long distance phone calls were forbidden. They lived 35 miles from Leslie's parents and often wanted to call, and the folks wanted to be phoned! Unfortunately, the budget would not (David would not?) allow much more than post cards sent frequently. On Christmas morning, Leslie's father presented David with a pair of carrier pigeons! One mealtime previous to the holidays, Leslie's mother served pickled beets. David was overheard whispering to Leslie that one serving would be an adequate "year's supply for him. Pictured here is David opening a gift which was supply for tagged, "a two-yeaDavid!" David and Leslie Swank have lived in Kamas since July, 1986. They have four children: Seth, 8 yean and bom in Rolla, MO; Eve, 6 yean and also bom in Rolla, MO; Luke, 3 yean, bom in Salt Lake City, and Mary, 18 months, also bom in Salt Lake City. David began his life in Mississippi; Leslie was bom in Iowa. In the past three and one-ha- lf yean, the Swanks have developed some "Utah" Christmas traditions and enjoy living here very much.
