Show I Castle Valley Comments... j i I find it hard to put into words the excitement and anticipation I feel when I wake up to those beautiful blue skies. 1 know that spring is close, and spring means planting rime. I guess it's called spring fever. Spotlight As you drive down the main road of the C.V. River Ranchos, the road makes a curve to the right. At this bend in the road is the Fred Officer homestead. Fred and his wife, Darlene and their four children, Guy 22, Kent 19, Terry 16, Leslie IS, have lived in many different states including 2 stays in Germany. Fred is retired from the Army and is now employed at Atlas. For Fred it was love at first sight when he saw Castle Valley. He decided that this was where he wanted to make his home. Darlene's reaction? "You've got to be kidding!" Darlene readily admits that she is a city girl. When I asked her what she liked best about Castle Valley there was a long, long, long pause. But she is a real trouper. Darlene, Terry, and Leslie spent many hours every day last year weeding their garden, gar-den, and tending the geese, chickens, rabbits and goats. I know she would have preferred prefer-red shopping in some air-conditioned mall. Everyone in the Officer family has a delightful sense of humor and they are all hard workers. Guy and Kent are two handsome young bachelors, bache-lors, but Castle Valley is a little short on young women (that is, until my seven girls grow up). Terry and Leslie hated to leave their fiends and move here, but now they have a lot of friends up here in the Valley and also in Moab. Either Darlene is beginning to like homestead life or she has spring fever too ... up with gardens. Homestead Hints No matter how hard we try, as mothers, to see that our children only eat wholesome foods, sweets of one sort or another are our children's favorite snack. And, I hate to admit it, but I have a terrible "sweet tooth." So, the trick is to give our children sweets that will give them some nourishment and not just empty calories. And to do this we sometimes have to be sneaky. You know the old saying, "What you don't know won't hurt you?" Well, in this case what they don't know will be good for them. Take peanut butter for instance (I'm talking about natural peanut butter-peanuts butter-peanuts only)-simply add brewer's yeast to the jar, stirring it all in so the kids won't notice, and you will be supplying your children with "B" vitamins plus the protein of peanut butter. Then try. . . Peanut Butter Sesame Balls Ingredients include: 3A c. peanut butter, 'A c. honey, 1 tsp. vanilla, c. powdered milk (non-instant works best), V c. toasted sesame seeds (Toast them in a preheated 200 degree F. oven for about 20 minutes until lightly browned), brown-ed), 1 c. oatmeal, 2 tbsp. boiling water, chopped nuts or toasted sesame seeds for coating balls. Combine peanut butter, honey, and vanilla; blend thoroughly. Mix powdered milk and oatmeal together. Gradually add to the peanut butter-honey mixture, blending blend-ing thoroughly, using hands if necessary to mix as dough begins to stiffen. Blend in the toasted sesame seeds. Add 2 tbsp. boiling water to mixture, blending well. Shape dough into one-inch balls. Roll in finely chopped nuts or toasted sesame seeds. Peanut Batter Fudge You will need Vt c. peanut butter, 'j c. honey, Vi tsp. vanilla, 1 pinch salt, l'a c. powdered milk or slightly more (non-instant). Mix peanut butter and honey until creamy smooth, mix in salt and vanilla. Add powdered milk a little at a time, mixing first with a spoon, then by kneading like bread dough. Press into a flat pan, chill and cut into squares. Carob Treats For these yummy treats 1 lb. carob chips (like chocolate chips), Vi cup nuts (your choice), 'j cup sunflower seeds, and 1 cup of coconut are needed. Melt carob chips in double boiler. Add nuts, seeds, and coconut, stir until all is coated. Spoon onto wax paper and let treats cool until set. Sometimes I just stir in 2 cups of homemade granola- It makes a great candy with less calories than chocolate. The bonus is giving your children a candy that is good for them.
