Show Oats, Peas, Beans, Barley at Castle Valley In response to a request from residents in Castle Valley that a vegetarian cooking class be held in the area. Pastor and Mrs. R. L. Watts from the Seventh-day Adventist Community Com-munity Service, Moab, conducted con-ducted two nights of good food and fun for more than 70 members of the community. Castle Valley Institute, a self-supporting self-supporting Seventh-day Adventist Ad-ventist boarding school, provided pro-vided the facilities for the classes which were held April 19 and 21. Beginning at 6:30 each evening the program featured excellent student and faculty talent in music, pictures, and food demonstrations. Tuesday night the school's String Ensemble, a group of five students and two faculty members, performed for the pleasure of the guests. On Thursday evening the entire student body, which comprises the choir, sang "Deep River" and the school song, "Castle Valley Desert School" composed com-posed by Warren C. Wilson. While the choir sang of the enchantment of their beloved valley, Michael Luchak portrayed por-trayed on the screen the changing moods of sky and rocks and mirrored ponds of Castle Valley. Because many of the residents resi-dents of the Valley grow their own food crops, emphasis was placed on the use of oats, peas, beans, and barley. Golden brown waffles made from soybeans and rolled oats delighted the eyes and the tastes of the guests. "The proof of the pudding is in the eating," so the old adage goes. And apparently the "pudding" must have been pretty good because the requests to return for more of the same was expressed far and wide. According to R. L. Watts, director of the program, pro-gram, more classes will be forthcoming next fal. |
