UNITED STATES INSPECTOR TO BE STATIONED AT PLANT Labels on Cans Will Tell the Public' Truth as to tho Contents. - The new Utah Packing company, which is building a plant in Salt Lake, and which will bo in operation by October Octo-ber 10, is lo havo a united Statos inspector in-spector stationed here to look after tho plant and seo that all meals aro turned out in a sanitary manner, and a thorough inspection both before and after the auimals are butchered will bo necessary before the products of tho plant may bo billed out to tho public markets as clean. Dr. II. II. Hicks, a vol eri nary surgeon sur-geon in tho Bureau of Animal "Industry, "Indus-try, has been detailed by Col. Hickox, I acting under orders front Washington, for this duty, and will begin his work as soon as the plant starts active operations. opera-tions. Dr. Hicks has been with tho Department De-partment of Agriculture for a long time, aud for tho past several weeks has been acting in place of Col. Hickox, who has been away on a trip over his territory. Tho doctor has an enviable' record with the department, and this plum which has fallen to him comes because of his meritorious service, and will bo learned of by his friends, professional pro-fessional and otherwise, with pleasure. New Rules Adopted. A new set of rules has been adopted by the department which will be strictly strict-ly enforced, and which will make it utterly impossible for the packers lo foist upon tho market goods bearing lalso labels. If the public will ouly watch the labels on the canned meats and other products of the packing plants, which they purchase, they will bo able to tell exactly what they aro getting and just what the ingredients of tho cans arc. Tho new rules aro very explicit and leave no room for doubt as lo their meaning, and there is no technicality whereby the packers may escape obc-dicnoo obc-dicnoo to them, eveul if "this wore do-sired do-sired by the latter. The local plant will bo subject to theso rules tho samo as any other. Tho new rulings aro dated at Washington, D. C, September Essential Features. Among the essential features of labels is mentioned the truo name of tho product, manufacturer, aud place of manufacture; tiliat labels must be printed in the English language; that no misleading picture or device shall bo placed on the labels; that geographical geograph-ical names may bo used only as denoting denot-ing the cut, stylo or brand; "that names denoting distinct breeds of stock cannot can-not be used unless tho product is ac-tuallj-- made from that breed j that when products aro made for any linn tho label must bear that information; that all words without a prefix, ouch a ham, indicato that the product is of pork, or any other animal as tho namo may iudicate; that all mixtures, such as hash, nuuee, or sausage, must bo indicated indi-cated as such on tho label; that if tho meats of any animal be used in tho I manufacture "of sausage or other product prod-uct of a like nature it must bo so started on tho label. Tho new rulings go on to specify every product of tho packing plant and give examples which cannot be mistaken. mis-taken.
