Show Caramel Chip Cake By KRISTINE PRYOIt 1 cup chopped dates 1 tsp. soda 1 cup plus 3 Tbsp. warm water 1 cup margarine 1 cup sugar 2 eggs 1 tsp. vanilla 2 cups flour Vz tsp. salt Vz cup chopped pecans 1 package (12 oz) butterscotch chips Vz cup pecan halves Sprinkle soda over dates; stir, then pour water over them. Let stand 3 minutes. Cream together margarine, eggs, add vanilla and salt. Slowly add date, water mixture. Add flour, chopped pecans and 1 cup of chips. Pour into greased 13 x 9 pan, sprinkle remaining chips on top, place pecan halves over chips. Bake at 350 for 40 minutes. Serve plain, with whipped cream or warm with a scoop of ice cream. |
