Show Coffee Cookies. One cup each of molasses, sugar and strong coffee, half cup melted lard, or butter, two teaspoons of soda dissolved in the coffee, two teaspoons of cinnamon, cinna-mon, and, if liked, a cup of chopped raisins. Flour enough for a moderately moderate-ly soft dough. Roll quite thick. Bako in moderate oven. Lemon Cheese. One pound loaf sugar, six eggs less two whites, one-quarter pound butler, the juice of three lemons strained, the rind of two lemons grated. Put all into in-to a white-lined saucepan, stir gently and boil slowly over a slow fire till it comes thick like honey.. Cream of Tomato Soup. One-half can tomatoes, one-quarter teaspoon soda, one quart milk, one slice onion, four tablespoons flour, one teaspoon salt, one-eighth teaspoon pepper, one-eighth cup butter. Scald milk with onion, remove onion and thicken with flour diluted with cold water until thin enough to pour, being careful that the mixture is free from lumps. Ono cup lard, three cups whlto sugar, one pint sweet milk, two eggs, pinch of salt, 5 cents worth of carbonate car-bonate of ammonia, 5 cents' worth oil of lemon. Dlssolvo ammonia in milk, mix stiff enough to handle easily, roll one-fourth inch thick. Pick with fork and have oven hot. Mocha Pie. Two tablespoons butter, three-quarter qup sugar, one egg, one-half cup milk, ono and a half cups flour and two teaspoons baking powder. Cream butter, add sugar gradually and egg well beaten. Mix and sift flour and baking powder and add alternately with milk to first mixture. Bako in two Washington pie plates, and when cool spread each with mocha frosting and put together. Mocha Frosting One-third cup butter, but-ter, ono and a half cup confectioner's sugar, ono tablespoon cocoa, coffee in-fusJfla, in-fusJfla, teiaja-buitwadd-Biisu: ttnd cocoa, then coffee Infusion until of right consistency to spread. Sansagc Hulls. Here ls something very nice. When you are making cream of tartar biscuits bis-cuits save out a little of the dough, roll it quite thin, cut Into squares largo enough to wrap around a sausage, sau-sage, pinch the ends together and bake, till brown. Yolks of five eggs, two cups granulated granu-lated sugar, two cups bread flour, one-half one-half cup cold water, one-half teaspoon tea-spoon soda, one teaspoon cream tartar, tar-tar, whites of three eggs, grated peel and juice of one orange. Beat yolks until thick, sift sugar threo times and add. Beat the whites of eggs stitf and add to first mixture, next the water and soda, then flour and cream of tartar tar-tar sifted twice. Lastly add the orange juice and grated rind. Bake in a dripping drip-ping pan and when dono cut in halves and frost with orange frosting. Frosting Whites of three eggs, ono orange juice and grated peel and pow-deredssugar pow-deredssugar to make stiff enough to spread. This cake is not good until the day aftervmaking. Be sure to use bread flour. Frosting may bo made without whites of eggs, |
