Show Jewkes Offer of Friends, family and neighbors Loretta Abeyta Jewkes have enjoyed Mexican dishes from her kitchen for years. Now her daughters Lori and Trisha are turning out their own recipes, and granddaughter Jessica is enjoying the fruits of their labor. Mrs. Jewkes grew up in Drag-ertoUtah (now called East Carbon). One of 11 children, Loretta watched her mother, Dora Gomez Abeyta, turn out meals for her large family. According to Mrs. Jewkes there were usually a few extra people around at dinner time, so much of Mrs. Abeytas time was spent in meal preparation. Loretta learned to cook by observing her mother and helping to make tortillas. After graduation Loretta worked at the Sports Mall. She then taught in the Early Learning Center at the Guadalupe Center as a part of a research program from the University of Utah which included such concepts as teaching child development to n, South-o- f used her Mexican recipes as a teaching aid to reinforce learning, and to add fun to classroom time. Last month she began a job with Granite School District as a Title 7 Demonstrator Bilingual Specialist in the center with gifted and talented. -- the Border Eating at At Its Best -- favorite of Mrs. Jewkes bridge club. The following recipe is from Lorettas daughter, Lori Williams. CJriCt Recitw large avocados, peeled and diced 1 large tomato, peeled and chopped 1 T mayonnaise IT lemon juice V4 cup diced jalapeno peppers 2 drops tabasco sauce. Mix together to make a chunky dip and serve with unsalted corn chips. Place in square glass pyrex baking dish. Cook in microwave for 5 minutes or until cheese starts to melt. Bake in conventional oven at 350 for 15 to 20 minutes. parents. Cook over a medium heat until the rice has browned. Set aside. Mix the following together with 6 sprinkles of garlic salt. 1 small can of tomatoes 1 medium onion chopped 1 tsp. salt 3 cubes chicken bouillon Cooking oil In a sauce pan melt margarine. Add onion and cook until tender. Add tomatoes, tomato sauce, garlic, chili powder, salt and hot pepper. Simmer uncovered 15 minutes, stir occasionally. Add V2 cup of the sauce to the chicken. Fry tortillas in hot oil a few seconds on each side. Place two tablespoons chicken mixture, some cheese in the center of each tortilla and roll up. Arrange in lVi quart shallow casserole dish, spoon the sauce over the en- - Mix the rice and sauce together in a pan that can be put on the burner of the stove.
