I Spicy Sauerkraut With Smoked Pork Butt . j (Makes 6 servings ) 1 (2-12 lbs.) smoked pork 1-13 cups None Such ready-butt ready-butt to-use mince meat 2 (lib. 11-oz.) cans 1 small onion, sliced sauerkraut, well drained Cover pork butt with cold water; bring to boil. Reduce heat and simmer for 1 hour. Place drained sauerkraut in buttered 2-12 quart casserole. Mix in the mince meat and sliced onion. Remove pork butt from water. Slice into medium-thick slices and arrange over sauerkraut mixture. Cover casserole. Bake in a moderate (350F.) oven 40-45 minutes, or until meat and sauerkraut sauer-kraut are tender. If a pre-cooked ready-to-eat type of smoked pork butt is used, it can be sliced and baked with the sauerkraut without simmering. |
