Show Venison Care Booklet Available The Division of Wildlife Resources Re-sources has published a pamphlet pam-phlet which can help make this hunting season more enjoyable en-joyable for both hunters and their wives. "Venison Field Care and Cooking" Co-oking" is available at all Wildlife Resources offices at no charge. The pamphlet contains con-tains tips on everything from dressing the deer to recipes. It is written by Flora Bard-well, Bard-well, nutrition specialist, Ut. State University Extension Services; Jess B. Low, leader, lea-der, Utah Cooperative Wildlife Wild-life Research Unit; andEthe-lwyn andEthe-lwyn B. Wilcox, professor, Food and Nutrition, Utah State University. An illustrated section on care in the field explains dressing, cooling, skinning, care of hide and transporting the carcass. A chapter on care of the meat at home gives pointers on aging, cutting cut-ting and butchering, freezing, canning, smoking, etc. The last two chapters deal with game cooking methods-roasting, methods-roasting, broiling, pan frying, stewing and contain recipes for steaks, chops, roasts, pot roasts, stews, soups, ground venison and specialties. |
