Show NANCY HAVEN'S Kecipe of the Month BRAZIL NUT CARAMELS CANDY MADE WITH YOUR own hands makes a warmly appreciated gift at Holiday time. These caramels, full of crunchy Brazil nuts, are most f obliging sweets for they can be made well in nancy haven advance of the busy days, wrapped and stored. Use Beet Sugar in all your Christmas candies for fine results: I,'. - "sir M v. 2 cups Beet Sugar 2 cups table cream (this added in two parts) Vi cup white corn syrup teaspoon salt Yi cup hutter or margarine 1 teaspoon vanilla extract 1 cup coarse cut Brazil nuts Combine in a Yi quart saucepan Beet Sugar, 1 cup of the cream, corn syrup and salt; cook slowly on medium heat to soft ball stage (236 F.) Add butter or margarine and remaining 1 cup of cream alternately in four additions, beginning and ending with butter or margarine (do not let mixture stop boiling), stirring constantly. Continue to cook slowly to hard ball stage (252 F.) Remove from heat and stir in vanilla and nutmeats. Pour into lightly buttered 8-inch 8-inch square pan. Cool completely, then turn out on board and cut with a sharp knife into 1-inch squares. Wrap each square with waxed paper or cellophane. cello-phane. Makes about 13A pounds.
