Show Patriotic month features cherries By KALYN SECRETAN February is a patriotic month and we honor two great presidents -Abraham Lincoln and George Washing. ! Lincoln spent his early years in a log cabin. As a young man, our ; great Civil War president kept store and split logs by day and read law ; by the firelight in the evening. On the; other hand, Washington was born to a life of luxury. General Washington and his charming wife, Martha, loved nothing better than ! entertaining friends at Mt. Vernon. Legend tells us Washington chopped down the cherry tree and ever since then cherries and hatchets hat-chets have been symbols of George Washington. Even though our national holiday for President's Day was celebrated on Feb. 18, George Washington's birthday is on the 22. Why not serve a cherry dish in his honor on his birthday? Cherry Cheesecake Make graham cracker crust by crushing 1 packet graham crackers. Add 1 square margarine and 2 tb. brown sugar. Press in the bottom of a 9x12 dripper pan. Soften 1 three oz. package cream cheese and whip 1 cup cream. Add cream cheese and whip together. Put over crust mix. Add 1 can prepared cherry pie filling. Chill and serve. Cherry Squares 1 cup flour 2 tsp. powdered sugar V2 cup butter Blend well. Spread 4 in. thick on ungreased cookie sheet. Bake 5 minutes at 350. 1 cup sugar V cup flour '2 cup coconut dash salt 2 beaten eeas 1 8 oz. bottle marachino cherries 1 cup chopped nuts 1 tsp. vanilla Mix all ingredients; spread on first layer. Bake 45 minutes at 275. (Do not use Cherry juice). For many people there is nothing: like cherry pie. We have our own pie cherry trees and just pit and freeze the cherries. When the time comes to use them, we just cook, adding sugar and corn starch with margarine and red food coloring added with a dash of salt. Easy Pie Crust 2V2 cups flour 1 cup shortening Vz tsp. salt Beat quickly with a mixer just until crumbly. Then add: 1 beaten egg xk cup cold water 1 tsp. vinegar Mix together. Just stir in the dry mix quickly and roll out the crust. |
