The Borden Kitchen has developed this modern way of making France's famous summertime soup, using modern-day instant flavor flakes to cut potato preparation time in half. VichyMoiM Supreme (Makes about 6 cups) 3 cups water i teaspoon pepper 1 medium-she onion, chopped 3 cups (1V4 pints) Light yt cup chopped fresh parsley Cream or Half-and-Half 4 chicken bouillon cube Vj cups Borden's Instant 2 tableeprons butter Whipped Potatoes 1 teaspoon salt (flavor flaked form) Place water, onion, parsley, bouillon cubes, butter and seasonings in large saucepan; bring to boil. Stir; cover. Simmer over low heat until onions are tender, about 12 minutes. Add light cream or Half and Half; bring to boiling point Remove from heat; stir in potato flakes. Let stand 3 minutes. Chill well. Garnish with chopped chives. |
