Utah has now reached the most critical stage in the development of its food campaign. We must save what has been so bounteously produced. pro-duced. With a crop average ranking above any other state proportionately in the union, our responsibility is correspondingly cor-respondingly greater. Through the various means of drying, dry-ing, canning, preserving and storing we must save that portion of our harvest har-vest which is not capable of immediate sale in the fresh stage. Every town in Utah which has not already done so should within the next few weeks consider con-sider the advisability of establishing municipal canneries, evaporators and storage facilities to handle the surplus sur-plus fruits and vegetables. Patronize the local canning and evaporating plaiMs to their capacity. They should be encouraged to develop. The housewives house-wives of the State are doing more than their share of the work. Cities, wards and counties should help. Salt Lake and other cities have already led out in the matter of community action in preserving and storage. The necessary nec-essary expense of equipment need not be great. There are county agricultural agents in most of the counties of the state. Call upon them for advice and assistance in the methods of construction construc-tion and operation involved in drying, canning and storing. If vou have no county agent, call upon the county chairman on Food Supply and Conservation Conser-vation for advice. Ther2 is a chairman chair-man in each county. It cannot be too strongly emphasized empha-sized that it will require difficult and sustained endeavor to prevent a large portion of our crops being wasted. Count v and city leadership in the next few weeks means a vast earing in food, which, if conditions continue as at present, mentis a vast saving of life. Energy was never worth so much as now. |
