But here s a recipe that Is "made" in the refrigerator. Part of the filling is cooked and gelatin added for the required firmness. When cool, the remaining ingredients, are folded in and turned into a butter-crumb crust. It too requires no baking. Slip it into the refrigerator and there you have it the perfect cheese cake! It's a good "family dessert" too. For this favorite is filling and nourishing, hence a happy ending for a soup and salad meal as Sunday night supper is in many homes. PINEAPPLE CHIFFON CHEESE CAKE V spring form pan 10 12 servings Butter Crumb Crust: 2 cups fine graham cracker crumbs H cup sugar cup melted batter Mix all ingredients. Cheese Filling: 2 tablespoons unflavored gelatin 2 eggs, separated Vi cup cold water Vt cup sugar 1 tetupuuu salt Vi cup milk 2 cups creamed cottage cheese, sieved 1 cup (U-oz. can) crushed pineapple with syrup 1 tablespoon grated lemon rind 1 cup whipping cream, whipped Soften gelatin in cold water. Beat together egg yolks, "4 cup of the sugar, the salt and the milk. Cook over medium beat stirring constantly until custard thickens. Remove trom beat and add softened gelatin. Stir until gelatin is dissolved. Cool. Add cottage cheese, pineapple, lemon Juice and lemon rind. Next, told In beaten egg whites to which the remaining Vi cup ot sugar has been added. (Sugar should be added gradually after egg whites are beaten, and continue beating until well blended.) Last fold whipped cream into pineapple mixture.
