Show OLE FOR SKILLET CHILI WITH DUMPLINGS "I " ,-rT ' T , i - r vx i i ' -Vn X ' 1. '' . Mexico's cooking is bright and gay. And, cooking with chili is the "secret" of Mexican Mexi-can cooking. For those busy days, try Skillet Chili with iron-rich Cream of Wheat dumplings. It's quick (approximately one-half hour) and easy to prepare and has the zip of flavorful Mexican cooking not really hot, just vibrant and exciting. DUMPLINGS: V-h cups milk 12 teaspoon salt 12 cup uncooked Cream of Wheat cereal, Regular, Regu-lar, Quick or Instant 2 tablespoons butter or margarine 2 eggs, slightly beaten 1 tablespoon chopped parsley CHILI: 34 cup sliced onion 1 pound ground chuck 1 (28-ounce) can crushed tomatoes 1 (16-ounce) can kidney beans 34 cup green pepper strips 2 teaspoons chili powder 2 cloves garlic, crushed 1 teaspoon salt 14 teaspoon crushed red pepper, optional 1. Make Dumplings: In medium me-dium saucepan, bring milk and salt to boiling point; slowly sprinkle in Cream of Wheat cereal, stirring stir-ring constantly. Return f.o boil; lower heat and cook until thickened, 2 to 3 minutes. min-utes. Remove from heat and beat in butter or margarine and eggs until well mixed. Stir in parsley; set aside. 2. Make Chili: In large skillet, skil-let, saute onion and meat II I III liri -i.iir niii.ii until browned; drain off fat. Add tomatoes, kidney beanS, green pepper, chili powder, garlic, salt and, if desired, red pepper. Bring to boiling point; lower heat and simmer, uncovered, 20 minutes. 3. Drop dumplings by table-spoonfuls table-spoonfuls onto hot chili. Simmer, covered, an additional addi-tional 10 to 12 minutes. Makes 6 servings. To Microwave Skillet Chili With Dumplings: 1. Make Dumplings: In large microwave -proof casserole, heat milk at 100 power foi 2 minutes. Add salt, Cream of Wheat cereal, butter oi margarine, eggs and parsley. 2. Cover with glass top oi plastic wrap; microwave at 100 power 3'A minutes, stirring after 2 minutes. Keeping covered, set aside. 3. Make Chili: In 3-quart microwave-proof casserole, combine onion, cluck, green pepper, chili powder, garlic, salt and, if desired, red pepper; pep-per; cover with glass top or plastic wrap. Microwave at 100 power 8 minutes, stirring after 4 minutes. 4. Drain tomatoes and kidney kid-ney beans; add to meat mixture; mix-ture; mix well. Re-cover and microwave at 100 power 6 . minutes, stirring after 3 minutes. 5. Spoon 6 dumplings onto i surface; re-cover; microwave at 100 power 5 minutes, turning a half turn after 3 minutes. |
