Today tomatoes toma-toes are one of the most widely used vegetables. We drink more tomato juice every year and the popularity of fresh tomatoes in salads, canned tomatoes in winter, and tomato pickles and preserves preser-ves is ever present. In addition they are good sources sour-ces of vitamines A and C. The tomato may seem like a common enough vegetable these days, but it had an exciting past. So highly prized was a tomato plant, it is said, that knights gave it to their "ladies as a mark of special favor. j Thus was born the term "love apple" ap-ple" by which the tomato was known until fairly recent times.. - Fully ripe tomatoes that -are firm and free from blemishes are best to choose; greener tomatoes will ripen at rcjom temperature in a day or so. When ripe, keep them in the refrigerator, and handle han-dle them carefully. This colorfud vegetable makes a sparkling delicious de-licious addition to summer meals if cut in slices, wedges or scooped out for stuffed tomato salad. Harvest of the main crop began in August. The Stone tomato in Utah is the most popular canning tomato. Tomatoes do not produce a good frozen product. I Tomatoes aren't the only good j buys in summer vegetables. Watch for good buys in beets, carrots, snap beans, celery, cu- . cumbers, peppers, potatoes, early apples, peaches, pears, cantalope and watermelon. |
