Show Eat Utah Lamb This Week Help Build Local Industry This week is Utah Lamb week. During this period, butcher shops and grocery stores are featuring Utah Lamb in their displays and advertisements to help promote the sale of this splendid Utah product. Sponsored jointly by the Utah Woolgrowers Association and the retail re-tail food industry, the campaign is being carried forward this year with a two-fold purpose to acquaint more people with Utah Lamb, and to render support to one of Utah's major ma-jor industries. The lamb crop this year was a very good one, both from a standpoint stand-point of quality and quantity alike. The woolgrwers of Utah, recognized recogniz-ed as a very valuable group to the welfare of the state, are very anxious anx-ious to place lamb before the public in the manner which is most satisfactory, satis-factory, and a campaign such as is being carried on in food stores and restaurants throughout the entire state seems to give the host results. Many peeple have been given the impression that lamb has approximately approxi-mately the same eating qualities as mutton. This is not true; indeed the two meats are very different in eating and cooking qualities. Lamb is especially tender, the meat has a smooth texture, and the flavor is both deliciows and palatable. Utah Lamb Week is a god time to serve lamb at all meals, since there are very many ways to prepare pre-pare it, making it suitable for breakfast, break-fast, lunch, or dinner.
