It is true that proper toasting changes some of the starch to dextrine which is quickly and easily digested. But laboratory experiments reveal that the proteins of toasted bread and crusts have a lower digestibility, digesti-bility, and animals gain less weight when fed on them than on the untoasted bread and the inside in-side crumbs of the loaf.
