Is seven days all you need to do? Please let me know. Beth Gleave, Antimony, Utah Ans: I called Donna Ford, the lady who told us about this, Beth.. She said she eats a raw potato almost every day and that this also seems to be helping her varicose veins problem. At least, her legs feel better than they have for years. She prefers baking bak-ing potatoes because they seem to taste better but she eats only a half because they are so large. Lime juice makes them taste better she says and it also keeps the cut edge of the remaining potato from turning dark. I would suggest letting the way you feel dictate how long you shoulcfcontinue with this simple remedy. Good luck and good health to you. Dear Vi: Lin's , market had nice eggs on sale last week at four dozen for a dollar. There are just two of us and that's a lot of eggs. However, if there is a good way to freeze them that's a good buy. Shirley Craig Yes, that is indeed a good food buy. And,' yes, you can freeze eggs. Here's how. Whole Eggs. Stir together the number of eggs you want in each container. Freeze immediately. immedi-ately. Label with date and num ber of eggs. Egg Whites: Don't mix, but freeze immediately. Label with date and number of egg whites Egg Yolks: Beat slightly. If you plan to use the yolks for baking, add one teaspoon sugar or corn syrup per cup of yolks. If to be used for omelets, scrambled scram-bled eggs, etc. add a teaspoon of salt per cup of yolks. Seal, label as above and freeze immediate-ly. immediate-ly. To use frozen eggs, defrost in original container. Use immediately. immedi-ately. Unless you have frozen them in the amounts needed for a recipe (i.e. egg whites for angel food cake) use this table: For each egg you'll need one and a half tablespoons defrosted yolks; two tablespoons defrosted defrost-ed whites; three tablespoons defrosted whole eggs. Dear Vi: While I was in the hospital for about two weeks, I missed the kids terribly. My sweet sister brought me a basket of artificial flowers she helped the children make. In the center of each was a picture of one of the children. You can't imagine how much this helped me. I would take a flower out, look at the picture of the child who made it and picture pic-ture him or her happily working with the others to make this special spe-cial surprise for me. Instead they sent out invitations for a "card shower" for their parents and advertised it in the paper. Hundreds of cards came along with pictures, letters, and phone calls and memories.
