School Recipe Spiced Strawberry Jam strawberries (approx) teaspoon allspice Vi teaspoon cinnamon teaspoon cloves 7 cups sugar Fruit Pectin 1 (1 oz.) box SURE-JELStem and thoroughly crush strawberries, one 2 qts. fully ripe L layer at a time. Measure 4 cups into 6 or 8 qt. saucepot; add spices. Measure sugar and set aside. Mix fruit pectin into fruit. Place over high heat and stir till mixture comes to a full boil. Immediately add all sugar and stir. Bring to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat and skim off foam with metal spoon. Ladle quickly into hot jars, filling to within Vt inch of top. Cover and process in boiling water bath for 5 minutes. About 9 (8 oz.) jars. 1 |
