Frozen in foil bak' ing cups, they are a joy to have on hand for the unexpected guest. You can also decorate them for a special holiday. However, sometimes getting the macaroons is not too easy, but I have been able to find nice macaroons at Day's Market. Do buy enough to make several batches of cupcakes when you find the macaroons, or you could make the macaroons but make enough so you have leftovers for the , cupcakes. Kids love these. I also have some banana recipes. These simple sweets will satisfy a desire for something sweet without added sugar. They are quite easy to prepare and they make excellent freezer standbys f f r for desserts or snacks. The steak strips are excellent for an impromptu guest dinner and are quick to prepare. Also, I have included some rhubarb recipes for those of you who have this in your garden. Or you can buy it at the market this time of year. , ' I I MACAROON CREAMS 20 almond macaroons (small size) 1 cup milk 25 regular-size marshmallows 2 cups whipping cream Vz tsp. almond flavoring Red or green cherries for garnish or whatever you wish to use Toast macaroons at 350 until they are crunchy and dried out, about 20 minutes. While they are toasting, dissolve marshmallows in 1 cup milk in saucepan over low heat, stirring often. Cool slightly. Grate macaroons into in-to fine crumbs or crush between waxed paper with rolling pin. (A food processor pro-cessor works well, also.) Add fine crumbs to dissolved marshmallow mixture. mix-ture. Whip cream in chilled bowl and add almond flavoring. Stir crumb-marshmallow crumb-marshmallow mixture into whipped cream. Place 2-inch foil baking cups on cookie sheet. Using a ladle, fill each one. Freeze at once, sealed in foil or plastic bag. Before serving, allow to set out for at least 20 minutes. Garnish Gar-nish cupcakes as desired. This recipe makes 20 small cupcakes or 12 large cupcakes. These are great for a party or large family gathering. Prepare ahead and keep in freezer. STEAK STRIPS AND MUSHROOMS 2 boneless sirloin strip steaks, about 10 oz. each 8 Tbsp. butter or margarine 1 cup sliced green onions, including tops, or chopped shallots 1 lb. mushrooms, cleaned and trimmed, whole or sliced cup red wine or beef broth Vi cup canned beef consomme (use 1 cup if not using the wine) y4 to M tsp. salt lk tsp. coarsely ground black pepper 2 Tbsp. lemon juice 2 Tbsp. minced chives Cut steaks into -inch by 2-inch strips. Heat 3 Tbsp. of the butter in fry ing pan or heavy skillet. Over high heat, saute meat 3 to 4 minutes, toss ing constantly until meat is cooked to your liking but do not overcook. Remove to warm platter. Add 3 Tbsp. more butter to pan and add green onions and mushrooms. (You may substitute canned button mushrooms for the fresh, if desired.) Saute over high heat for 3 to 4 minutes. Remove to platter with meat and keep warm. Add wine and broth (or all broth) to pan. Over high heat boil, scraping the browning from pan into sauce. Taste and add salt and pepper as desired, Add lemon juice. Also add any juices from meat on platter. Boil over high heat until juices are a glaze about Vfc-inch deep in pan. Whisk in remaining butter. Return meat and mushrooms to pan. Toss and cook over high heat unitl mixture is hot. Sprinkle with chives and serve immediately. 4 servings. serv-ings. For 8 servings double the ingredients but use only cup each wine and broth of Vk cups broth. RHUBARB BARS BANANA TREATS Cinnamon Banana Ice "Cream" 4 fully ripened bananas 1 Tbsp. lemon juice Vi tsp. ground cinnamon Toasted slivered almonds Sliced strawberries and oranges, optional I 3 cups cut up rhubarb 2 Tbsp. cornstarch l4 cup water 1 tsp. vanilla Vk cups granulated sugar IVi cups oatmeal (quick cooking) 1 cup shortening 1 cup brown sugar, packed Vk cups all-purpose flour 1 tsp. baking soda Dissolve cornstarch in water in saucepan. Add rhubarb, granulated sugar and vanilla. Cook until thick. Remove from heat and cool. Combine oatmeal, brown sugar, shortening, flour and soda in bowl. Mix until crumbly. Pat of mixture into one 9x13 inch pan. Pour rhubarb mixture over top. Sprinkle rest of crumbs on top. Bake at 375 for 30 to 35 minutes. Cut into bars when cool. RHUBARB NUT BREAD Vk cups brown sugar cup vegetable oil legg 1 cup buttermilk 1 tsp. salt 1 tsp. baking soda 1 tsp. vanilla 2 cups all-purpose flour Vk cups diced fresh rhubarb lk cup chopped nuts H I t r i wmmmmmmmmm, m i MAREN JOHNSON shows a vest that she made in less than 30 minutes, and is a nice addition to any wardrobe. Be sure they are airtight. Put wrapped I bananas in covered freezer container or heavy plastic bag. Freeze at least 12 hours. Unwrap and put bananas in blender, one at a time, beating into j 4 pieces to process, or put into food processor with steel blade and puree, j Add lemon juice and cinnamon, mixing well. Spoon into individual dishes i and garnish with toasted almonds, sliced strawberries and orange slices, j if you like. 4 servings. J I I BANANA ICICLES 4 fully ripened bananas 4 Tbsp. chocolate fudge sauce 2 Tbsp. chopped pecans ,. Mint leaves for garnish, if desired - Freeze foil-wrapped peeled bananas in covered freezer container or heavy plastic bag for at least 12 hours. Remove and partially unwrap to I be eaten as is or cut into bite-size pieces and eat with picks or by hand. OR serve with chocolate sauce and chopped pecans over the pieces or for j dipping and dunking. 4 servings. BAKED BANANAS 4 bananas 18 cup granulated sugar 18 cup brown sugar, packed Juice of one lemon 4 Tbsp. butter or margarine . Orange sauce (recipe follows) Orange slices and slivered orange rind Slice bananas In half lengthwise. Then cut crosswise, If desired. Place in buttered baking dish. Mix sugars together and drizzle bananas with lemon Juice. Dot with butter and sprinkle with sugar mixture. Bake at 350 for 20 minutes or until bananas are golden brown. Spoon Orange Sauce over the top. Garnish with orange slices and slivered orange rind. Serve warm. Cringe Sauce: In saucepan, mix together Vi Tbsp. each sugar and cornstarch. cor-nstarch. Gradually stir in I cup orange juice. Cook over medium heat, stirring stir-ring until thickened and clear. 4 serv ings. I I I I Topping: j Vz cup sugar I xk tsp. cinnamon I 1 Tbsp. butter j Mix bread ingredients well. Stir in rhubarb and nuts. Pour into loaf pans, j Mix topping and sprinkle over batter. Bake for 60 minutes at 325' or until I tester comes out clean. Makes 2 loaves. L . j COCONUT MACAROONS 2 egg whites j Dash salt . ' ..... - j M tsp. vanilla I k tsp. almond flavoring cup granulated sugar One 3',fc oz. can (Vk cups) flaked coconut Beat egg whites with dash of salt and the flavorings until soft peaks form. Gradually add sugar, beating until stiff. Fold in coconut. Drop by rounded teaspoons onto greased cookie sheet. Bake in slow oven (325) about 20 minutes. Makes about Vk dozen cookies. You'll never guess what this cute vest is made out of. Four count 'em, four placemats! Maren Johnson made her vest from placemats that she found at Ashton's, although any quilted or otherwise thick placemats will work. About the only must is that the placemats are rectangular in shape. If a quilted placemat is used, the tape or trim should be taken off before sewing, then when the vest is finished, the edges are trimmed in bias tape. This will make the seams turn out more even-looking. Take two placemats and sew them together along the long edges for the back seam. To make side seams, sew each of the remaining placemats to long edges of back, stopping two thirds of the way from the top. Then sew shoulder seams, beginning on the out side corner and sewing halfway across short edges. For the trim, sew bias tape around front, bottom and neck edges, and around sleeve edges. The placemats Maren used were frayed around the edges to start with, so the seams were turned out for a different dif-ferent effect, and there was no need for bias tape trim. Cording was added on the front to tie the sides together. It would also look cute with any kind of decorative buttons, but-tons, snaps or frogs. The lapels refused refus-ed to stay down by themselves, so they were tacked down near the corners. This vest was a little expensive to make, but quilted placemats come in all colors and all prices, and you could even quilt your own placemats out of material and a little batting tomake it really inexpensive.
