Show Happy Homemaker Weaver Says Ham it Up with YourTurkey by Janet Weaver Whether you had Turkey or Ham for New Year's Dinner, here's some exotic ways to use up the left overs. AFTER HOLIDAY TURKEY CASSEROLE 1 cup rice 2 Tbs. instant onions a pkg. frozen green peas, thawed 2 cup finely diced green pepper 3 Tbs. melted butter 2 cups chopped turkey 1 (10:14 oz.) can cheese soup 1 cup milk 1 cup finely crushed cheese crackers Prepare rice 'according to directions on package, ad minced onion to boiling water. Fluff rice with fork and spread in a l1-. qt. casserole. Add peas, pepper and turkey. Mix soup and milk together and pour over other ingredients. Then combine crumbs with butter -and sprinkle over top of casserole. Heat in oven at 350 deg. for 45 minutes or until warmed through. HAM, MACARONI, AND BROCCOLI CASSEROLE 3 Tbs. butter '.i cup enriched flour ' tsp. salt dash pepper tsp. dry mustard 1 Tbs. grated onion 3 cup milk Two thirds cup grated cheese 8 oz. elbow macaroni 6 oz. cubed ham 1 pkg. cut broccoli, cooked grated Parmesan cheese Melt butter in large pan. Blend in flour, salt, pepper, mustard and onions. Add milk and cook until sauce is thickened. Remove from heat and blend in cheese. Add ham, broccoli, and cooked macaroni to cheese sauce. Turn into lightly greased 2 qt. casserole, sprinkle with. Parmesan cheese. Bake at 375 deg for about 20 minutes, or until sauce is bubbly. Makes 4 to 6 servings.
