Show English muffin loaf made in microwave Summertime breads Warm weather won't stop cooking enthusiasts from preparing the best foods they possibly can. ..this includes baking their own delicious, homemade home-made breads from scratch. The Cinnamon English Muffin Loaf pictured here is baked via microwave, never overheating a busy kitchen. Developed by the Test Kitchen of Fleishmann's Yeast, this batter bread requires no kneading, and is made with half the cost of packaged English muffins. Cinnamon Microwave English Muffin Bread (Makes 2 loaves) 5 cups unsifted flour Vfe cup dark seedless raisins 2 pkgs Fleischmann's Active Dry Yeast 1 TB sugar 2 tsp salt Vk tesp ground cinnamon 14 tesp baking soda 2 cups milk ' cup water Cornmeal In a large bowl combine 3 cups flour, raisins, undissolved yeast, sugar, salt, cinnamon and baking soda. Combine milk and water in a saucepan. Heat over low heat until liquids are very warm (120Fi to 130F.). Gradually add to dry ingredients and beat well, Stir in remaining flour to make a stiff batter. Spoon into two 8'2x412x212 or 9x5x3 inch loaf dishes which have been greased and coated ' with cornmeal. Sprinkle tops of loaves with additional cornmeal. Cover; let rise in a warm place, free from draft, for 45 minutes. Microwave each loaf on high power for 6 minutes, 30 seconds. Surface of loaf will be flat and pale in color. Allow to rest 5 minutes before removing remov-ing from dishes. To serve, slice and toast. Spread with margarine if desired. To Bake in Conventional Oven Stir in 1 cup additional unsifted white flour into batter to make a very soft dough. Spoon into two 812x41x212-inch loaf pans that have been greased and sprinkled with cornmeal. Springle tops with cormeal. Allow dough to rise as directed. Bake at 400F. for 25 minutes. Remove from pans immediately im-mediately and cool. |
