Show This Week's RECIPE . . . With Christmas not far away, everyone is busy baking and preparing their favorite cakes, cookies, etc. Delicious treats during the holiday season will be the following cookie recipes, which Mrs. Arch McKinlay has among her favorite's. ENGLISH TEA CAKES Vz lb. butter, creamed 2 Vz cups sifted cake flour Vz cup powdered sugar Vz cup nuts, or more (walnuts or pecans) 1 tbs. vanilla Cream butter, flour and sugar well. Add nuts and vanilla. Mold in any shape desired, allowing about a heaping tablespoon table-spoon dough to each cookie. Dough may be tinted light green, pink, etc. if desired. Bake at 250 degrees for 40 or 45 minutes (cookies will remain re-main white when baked). When partially cool, roll in powdered sugar. CRUMB COOKIES Wz cups sifted flour Vz cup brown sugar 4 tbs. butter or shortening 1 tsp. baking powder Vz tsp. salt 2 egg yolks Combine dry ingredients and mix in shortening. Then add egg yolks. Mix until crumbly. Pack into pan about 7 by 11 inches. Beat egg white's until stiff, adding 1 cup of brown sugar slowly. Blend well, then add 1 tsp. vanilla and 1 cup chopped nuts. Spread on crumb mixture. Bake at 325 degrees for about 20 or 25 mmutes. When cold cut in small squares. |
