Show Ccarolyn's kitchen J New Year's Breakfast By CAROLYN KURR WARDLE Bring the New Year in with a bang by inviting friends and family for a midnight breakfast. This is a fun and unusual way of serving food at a party. If you don't want, to leave vour euests as vou prepare the food, invite them to join you in the kitchen. You will find that it can be a lot of fun to prepare the breakfast together. Eggs tire a traditional basic for breakfast and by dressing them up a bit, they are perfect for your midnight celebration. Country Brunch Omelet adds ham and potatoes to a fluffy omelet that is easy to prepare. Toasted Oatmeal Bread will bring rave reviews from your guests for its flavor and texture. It takes longer than most breads to prepare, but it is well worth it. Prepare it the day before so it will be ready to toast whenever you need it. Fruit surprise is a mixture of fresh fruit topped with a sprinkle of coconut and a maraschino cherry. It adds a bright bit of color to your breakfast. Add a hot drink and invite your guests to join in the festivities. They'll love it. Country Brunch Omelet lA cup butter 2 cups cubed uncooked potatoes 'i cup finely chopped onion 1 cup cubed ham Vi cup chopped parsley 6 eggs tsp. salt Dash pepper 2 Tbsp, milk V2 cup shredded jack cheese Melt butter in 9 or 10-inch frying pan. Add potatoes and onion, and cook over medium-high heat, covered, stirring occasionally to brown evenly until tender. Add ham and cook until lightly browned. Sprinkle parsley over mixture. Reduce heat to low. Beat eggs, salt, pepper, milk together until well blended. Pour egg mixture over potatoes and ham. Cover and cook until eggs are almost set. slipping spatula around edge of pan occasionally to allow egg mixture to run down (about 10 minutes). Sprinkle egg dish with cheese. Cut in wedges to serve. Makes 4-6 servings. Oatmeal Bread cups warm water 2 pkgs. yeast 2 cups oatmeal AVi cups boiling water 5 Tbsp. margarine 5 tsp. salt 1 Vt cups honey 3 cups whole wheat flour Enough white flour for a kneading consistency Dissolve yeast in warm water. Combine oatmeal and boiling water. Let sit for 20 minutes. Then add margarine, salt, and honey to oatmeal mixture. When oatmeal has cooled add yeast and whole wheat flour. Mix well and then add enough white flour to reach a kneading consistency. Let sit until double, knead, double again, knead, double again. Punch down and divide into 4 loaves and let rise until double. Bake for 55 minutes at 325F. Makes 4 loaves. Fruit Surprise 1 banana, sliced 1 apple, cut into bite-sized pieces 1 orange, cut into bit-sized pieces Vi cup flaked coconut 4 maraschino cherry halves Combine banana, apple, and orange together. Put mixture into individual serving dishes. Sprinkle with coconut and then place maraschino cherry half on top. Chill until ready to serve. Serves 4. |
