Show Home Cookin' By Angie Martin Although fall is right around the corner, there are still some fresh fruits and vegetables in the market and in your garden. Here are some interesting new recipes for using fresh corn, plums and peaches. I know you will enjoy trying them and some may become family favorites. PIE pkg. (10 oz.) pie crust mix or your own favorite pie crust recipe ears fresh corn d eggs, sliced Tbsp. finely chopped onion 2 Tbsp. finely chopped fresh parsley 1 Tbsp. flour 1 Tbsp. sugar tsp. salt Vi tsp. ground pepper 4 Tbsp. butter or margarine 34 cup light cream or 1 hard-cooke- V-- . ppptmpp-p- p , fyir September 11, 1985 Vernal Express 1 5 lb. fresh mushrooms or 2 (6- - to cans sliced mushrooms chicken (2V4 lbs.) cut into parts 1 chicken bouillon cube 34 cup boiling water 1 cup carrots, cut into chunks Vi lb. green beans, cut into lengths, or 1 pkg. frozen cut green beans, thawed U2 tsp. basil leaves, crumbled 14 tsp. salt 18 tsp. ground pepper 2 Tbsp. flour 1 jWvyt- Wednesday, CHICKEN AND VEGETABLES 1 2 Tbsp. cold FRESH CORN 6 3 2 w jppp-ptpp-tt ryr'yr7p-yrjpyrp-prprpllyr,vpv- ? er i 4 water Rinse, pat dry and halve fresh mushrooms. Or drain canned mushrooms and set aside. Arrange chicken on rack in 13x9 inch baking pan. Bake in preheated 450" oven until browned, about 20 mintues. Remove chicken from rack. Pour off any chicken fat from pan. Dissolve bouillon cube in boiling water. Stir into baking pan with carrots, green beans, basil, salt, pepper and reserved mushrooms. Add chicken, spooning some of sauce over chicken. Cover and bake in preheated 350" oven until chicken and vegetables are fork tender, about one hour. In medium saucepan, combine flour with cold water. Blend in liquid from baking pan. Cook and stir until mixture boils and thickens. Pour over chicken and vegetables. Serve with cooked rice, if desired. Makes 4 portions. 3r - "t o half-and-ha- lf Golden Age Prepare pie crust following package directions. Roll half of the pastry inch thick. Line a pie pan with rolled pastry. Remove kernels from cob with a sharp knife (makes about 3 cups of kernels). Combine corn, eggs, onion and parsley; pour into pie pan. Combine flour, sugar, salt and pepper. Sprinkle over corn mixture. Dot with butter and inch thick. Place pour cream over all. Roll remaining pie crust over corn mixture and seal edges firmly. Make a slit in center of crust for steam to escape. Bake in preheated 450" oven for 8 minutes. Reduce heat to 350" and bake until crust is browned, 50 to 60 minutes. CORN OYSTERS Neff family cup fresh corn cut from cob 2 eggs, separated flour 4 cup sifted 2 tsp. baking powder 1 tsp. salt 116 tsp. pepper V2 tsp. grated onion Bacon fat or vegetable shortening 1 active at fairs are active in their communities and participate in Some families Mix corn and egg yolks in medium bowl. Mix flour with baking powder, salt and pepper; stir into corn and egg yolks. Beat egg whites until stiff and fold in. Drop from teaspoons onto a hot griddle greased with bacon fat or shortening. Cook until brown. Serve 4 com oysters per person. Makes 5 servings or 20 corn oysters. Note: If bacon fat is used, cook 4 strips of bacon for sufficient fat and serve with oysters. CORN BAKED IN THE HUSKS Remove silks from corn. Replace husks and tie with string. Soak corn in water for 10 minutes. A family dinner was given at the home of Matthew Briggs parents the afternoon of Sunday, Sept. 8, following his farewell at the Manila LDS chapel. FRESH PLUM CROQUANT Filling: 2 lbs. fresh plums, halved 23 cup sugar 3 Tbsp. lemon juice 3 Tbsp. butter and pitted (about 12 plums) Crust: Vi cup flour u,,'.,, Vi cup sugar ,,K Dash salt Vi cup butter, softened V2 cup unblanched sliced almonds (aboit 2 '4 oz.) 1 tsp. vanilla , For filling, gently toss plums with sugar and lemon juice in lVi quart baking dish. Dot with butter and bake in 400" oven for 20 minutes. Meanwhile, for crust, mix flour, sugar and salt in medium bowl. Cut in butter with pastry blender until mixture resembles coarse meal. Add nuts and vanilla. Remove plums from oven and baste with juices. Mound crumb mixture in center of plums. Return to oven and bake 15 to 20 minutes more, or until crumbs are golden. Cool slightly before serving. Makes 6 to 8 servings. Note: Amount of sugar may vary according to plum variety used and sweetness desired. FRESH PEACH PICNIC PIES pie crust mix or pastry for pkg. 4 fresh peaches, peeled and quartered 4 cup sugar 2 Tbsp. cornstarch Dash salt Dash nutmeg 1 Tbsp. lemon juice 4 aluminum foil tart pans (5 inches in diameter) (11 oz.) 1 pie Prepare pastry as directed. Divide into 4 parts. On lightly floured board, circle. Ease pastry circles into tart pans. Place roll each part into a 4 peach quarters in each pastry-linepan. In small bowl, combine sugar, cornstarch, salt and nutmeg. Sprinkle mixture and lemon juice onto d peaches, dividing equally. Gather edges of pastry up around peaches pinching slightly. Brush pastry with milk or beaten egg and sprinkle with sugar, if desired. Bake in 450" oven 15 minutes. Then reduce heat to 350" and continue baking 30 minutes more. Serve warm or cold. Last Tuesday Lorna Holmes captured first place, winning five games and Ida Neilson and Phyllis Warby came in second with three games each. Last Thursday a group of Senior Citizens traveled to Iron Springs for an outdoor picnic. It was a bit nippy so after lunch we came back to the Center and played games. Thursday, Sept. 19, we will be going to the Red Fleet Campground for breakfast. The bus will leave the Center at 9 a.m. This will be the last outdoor picnic for this year. A big thanks to Wanda and those who helped her to arrange these picnics for us to enjoy. The time for the Senior Citizens to swim at the community swimming pool is 11 a.m. to 12 noon Mondays through Thursdays and 11:30 to 12:30 on Fridays. Besides swimming, there is also an exercise class in the water which is a fun thing and relaxes you. Come on all who like to dance. Lets see your smiling faces every Friday night at the Golden Age Center for the dances. The young, middle aged and elderly are all invited. We had a super dance last Friday night.
