One of their favorites is sweet breads that doubles as cake, too. As one of the worlds leading coffee drinkers, the Danes break for coffee and cake several times a day. The following recipe is an adaption of a true Danish tea bread, moist and satisfying enough for breakfast and flavorful enough for a light dessert. The ingredients reflect the hallmarks classic of xk fresh Scandinavian cooking eggs, butter, nuts, cherries and Peter Peering, an imported liqueur made with the finest cherries in the world. DANISH CHERRY NUT BREAD Cake: 1 cup walnuts, coarsely chopped 1 cup maraschino cherries, sliced and well drained flour IMj cups sifted 2 teaspoons baking powder xk teaspoon salt 3 whole eggs cup Peter Heering Glaze: 6 tablespoons sugar 6 tablespoons Peter Heering 1 to 2 drops red food coloring, if desired Preheat oven to 350F. Grease and flour a standard loaf pan. Combine the nuts and cherries and set aside. Sift flour, salt and baking powder. Cream the butter with the sugar until light and fluffy. Add the eggs, one at a time, mixing well. Using a large wooden spoon, alternately add the flour and Peter Heering; mix well. Fold in the nuts and cherries. Bake in prepared pan for one hour, or until cake springs back when pressed in the center with finger. I used most of the berries to put up a good many jars of preserves. A while ago you wrote that homemade preserves are likely to lose question regarding floorcovering next week. Because of this, I want to use up some of my strawberry preserves in baking. I have your recipe for Jam Cake, but Id appreciate another recipe in which preserves are called for. -- BE PREPARED. DEAR BE PREPARED: Heres a recipe for a nutritious quick bread made with oats ground in an electric food processor or blender into flour. It also calls for strawberry preserves and finely chopped walnuts. The strawberry, oat and walnut flavors mingle so none of them is distinct but together provide interesting texture. The loaf cuts well if you slice it about thick; dont try to slice it thin, even after storing overnight C.B. V4-in- ch NEW OAT LOAF g oats cups 2 cups flour 2 teaspoons baking powder 1 teaspoon salt 1 cup strawberry preserves Vz cup commercial sour cream cup butter cup sugar 1 teaspoon vanilla 4 large eggs cup finely chopped walnuts In a food processor with the metal blade or in an electric blender, grind oats until they are as fine as flour about a minute; there should be 1 cup oat flour. In a medium bowl thoroughly stir together oat flour, allpurpose flour, baking powder and salt. In a small bowl thoroughly stir together preserves and sour IV4 quick-cookinse cream. In a large bowl cream butter, sugar and vanilla; beat in eggs, one at a time, until blended. Add mixture in 4 additions, alternately with preserves mixture, stirring each time until dry ingredients are moistened. Stir in walnuts. Turn into a greased and floured 9 by 5 by oat-flo- ur ch loaf pan. Bake in a preheated oven for 1 hour; place a tent of foil over the pan; continue baking at 350 degrees until a cake tester inserted in the center comes out clean 25 to 30 minutes. Place on a wire rack to cool for 10 minutes; with a small spatula loosen edges; turn out on the rack; turn right side up; cool completely.
