Spices are derived froy no particular part of a plan: or tree, but from whichever parts happen to be richest in flavor. They are used either as powders or as decoration1! Spices have been regardei as a luxury, or at least have been held in high esteem, throughout history. Arabia was known as "Araby the blest" because of the fact that t. served as a distributing point for spices. The trade promoted promot-ed the expansion of the Roman Rom-an Empire, and it was responsible respon-sible for the period of exploration explor-ation that resulted in the discovery dis-covery of the "New World." Most spices are of tropical origin, or-igin, but some have been naturalized na-turalized elsewhere. I The use of spice in cookery is parallel to the use of makeup make-up in grooming. Both should be used subtly in order to achieve a particular effec! without becoming too noticeable. notice-able. They can then achieve an intriguing elusiveness. Tightly covered spices will retain their full body anj strength for months. However, spices that have been exposed to the air over a period of time or that have been allowed to stand for over a year in a kitchen or closet, will have lost most of their value as seasoners.
