Audrey Thompson is serving serv-ing marshmallow topped baked applesauce to Cole and Aaron. THE OCTOBER salad is served with a ginger dressing. Both the baked applesauce and October salad are old Shaker recipes, served weekly for lunch at Pleasant Hill, Kentucky, Ken-tucky, during the summer months. The recipes are a bit unusual but are delicious. Audrey lived in Tennessee most of her life, until she came to Utah. She brought many of these Shaker recipes to Utah with her. THE MARSHMALLOW topped applesauce is suitable for a light dessert, with the added sweelness on the top. But it might also be served with pork dishes, for a delightful delight-ful change from just plain old applesauce. BAKED APPLESAUCE Use as much chunky applesauce apple-sauce as needed, adding cinnamon cinna-mon and sugar to taste. Heat in a saucepan and transfer to a shallow baking dish. Top with marshmallows and bake at 350 degrees until the marshmallows marshmal-lows are a golden brown. Serve while hot. AUDREY says the miniature marshmallows are more attractive on the applesauce, but if your family especially likes marshmallows and the dish is to be used for dessert, the large ones are alright too. OCTOBER SALAD 1 - 3 oz. package apple gelatin I cup boiling water cup cold water ': cup chopped dates I cup diced red apples, with peel 1 cup diced pears, fresh or canned DISSOLVE gelatin in the boiling water and add the half cup cold water and chill slightly. slight-ly. Add remaining ingredients and pout into a wet ring mold. GINGER SALAD DRESSING 13 cup mayonnaise 2 Tbs. chopped candied ginger 13 cup cream whipped FOLD whipped cream into the mayonnaise, then fold in the ginger and serve. It is especially attractive to unmold the ring of October salad on lettuce leaves placed on a large serving plate. Using a small dish, place the salad dressing inside the ring. Or if you prefer to mold the salad in a square casserole and cut into squares, pass the ginger dressing dres-sing for the topping. Serves about ab-out 8. THOUGH Audrey lived in Tennessee most of her life, until un-til she came here, she said, "I came to Utah three years ago and enjoy living in Farming-ton, Farming-ton, which is a delightful community com-munity for the children" she continued. "I collect cook books, especially those with old recipes and these are two of them." She likes to sew. knit and reads a lot on many different subjects.
