By KALYN SKCRP:TAN Have you ever found yourself chairman of a Banquet for your Church, Club or Community group? If this happens to you and you are in need of suggestions, here are a few you might want to consider. The following was served to 350-37-0 persons. (Children and adults.) Roast Beef we bought 100 lbs. in 1 lb. roasts. We put seasoning salt on and cooked in an oven at 300 with no cover, no water, no salt or pepper, for 5-- 6 hours. (Some needed a little more cooking.) We took them back to the store where we purchased them and they cooled them overnight and sliced the meat. They were heated the night of the banquet in the juices for 45 minutes. It was easy to serve because it was already sliced. Potatoes If you are serving instant potatoes, you will need about eight gallons; baked potatoes, 1 per person wrapped in foil. Potatoes can be wrapped in foil and boiled in large kettles. The time will vary according to how many you put in a kettle. They are nice to serve at outside chuckwagon suppers because they stay hot for a long time. If you use a large kettle, they will probably need to steam for two hours. One bushel of potatoes will serve 100 people diced, mashed or scalloped. French Style green beans, 11 gallons were served at the dinner; rolls, 40 dozen; jello salad, 26 cake pans were set each containing 2 packages lemon jello and four bananas, one package dream whip was put on the top with grated cheese; pickles, 3 gallons; olives, 2 gallons; dessert, Strawberry He, 26 pans were made (9 x 12). They were cut into 15 pieces for a total of 390 pieces. They were prepared with one package graham crackers combined with one square melted margarine and two tablespoons brown sugar. This was pressed in the bottom of the pan. Danish Desert was prepared according to directions and poured over the crust which had one cup of strawberries on it. Chill for about three hours and serve with whipped cream or topping. Plan on one pint of cream for 25 people. Other meat suggestions include: Chicken, 250 people - 50 chickens. Brown in about 5 lb. flour and add paprica, salt and pepper. Steam in roasters about 2Vi hours. Use one gallon salad oil to brown the chicken. Turkey and Dressing, 250 people, eight turkeys. Dressing was made with 16 loaves bread, 16 eggs, 1 stalk celery, 5 onions, sage, 2 lb. margarine and ' gallon milk. Add enough milk to make it moist but not sloppy because it will pick up moisture in the baking. Cube Steak, 250 people, 250 cube steaks, 2 dozen eggs, 4 quarts milk, 8 lb. crackers to make crumbs, 1 gallon salad oil. Dip the cube steaks in flour, then into the egg-mil-mixture which has been blended well. Then dip in the cracker crumbs. Brown in the oil and put in a roaster to steam. Pour cream of chicken soup and dry onion soup mix over the meat. (About 10 cans soup and 6 packages onion mix. Ham (Baked at low heat). You can serve 15 lb. for 50 people. Boneless rolled d you can serve 50 people with 10 lb.. To serve cold ham with a buffet, 5 lb. will serve 50 people. For pre-slice- have it cut according to how many you want to serve. Vegetables: Frozen vegetables 25 lb. will serve 300 people. Canned vegetables, you will need about 3 gallons per 100 people. Carrots, 70 lb. will serve 200. Baked Beans to serve 300: 40 large cans pork and beans, add 2 large bottles ketchup, 2 Tb. mustard, 3 cups brown sugar, and 4 tsp. onion salt. Fruit Salad, 250 people, 4 gallons fruit cocktail, 1 gallon pineapple, 20 apples, 4 packages marshmallows (miniature), 15 lb. bananas. Make a dressing by thickening the juices drained from the fruit. Use a package of cornstarch and 6 cups sugar in the juices. After thickened and cooled add 4 qts. whipping cream. Potato Salad, 150 people, 100 medium potatoes, 3 doz. eggs, 5 onions, 2 or 3 bunches radishes. Make the dressing by mixing 1 gallon salad dressing with 2 cans milk and 6 tsp. mustard. Fruit Punch, 30 gallons. Mix 8 12-o-cans orange juice, 8 cans lemonade, 8 48-oz- .' can pineapple juice. (The orange juice and lemonade are frozen.) Add 6 gallons water and the citric acid. Add enough more water to make the 30 galons, including ice at serving time. The Vikes host Carbon today in the league's final game and then will prepare for . the state 3-- A tourney. Pleasant Grove kickers shut out Lehi Pioneers By BRAD JOHNSON Lehi, the defending Region 8 champions, met the Pleasant Grove Vikings in a losing battle Wed-nesday. Lehi needed a win to be eligible for the state playoffs, but .hope was lost as the Vikes rolled over the Pioneers, The first of seven PG goals was made by Ilkka Lehmusvirta within the first minute of play and was followed by two more. Don Field put in three and Troy Crosley had one for the high scoring PG squad. PG's excellent defense and goalie, Mark Sidwell, has held opposing teams to a total of five goals while the Viking offense has scored 36 in league play. The Vikings host a tough Carbon team today at 3:30 p.m. on the Viking field to close out region play. In their first meeting, the Vikes got by the Dino's, in a match played in Price. Vikings outrun Payson in dual track meet Pleasant Grove's track team pounded Payson in a dual meet held last week on the Viking track. ' The girls rolled over the visiting Lady Lions ,. with Lila Fugal taking first place in three events and Debbie Fisher, Christine Lutes and Rhonda Simmons each winning a pair of events. Fugal was tops in the long and high jump and the 100 meter high hurdle event. Fisher won the 200 and 400; Lutes took first in both weight events, the shot put and discus while Simmons was best in the 100 and 300 hurdles. Other first place winners for the Lady Vikings were Laurie Ostler in the 1600 and Jill West in the 800. While the girls were beating up on Payson, the boys were crushing the visitors 111 to 30. Ron Reynolds j posted three first place wins in the i. lfiOO, 800 and 3200 plus running a leg t on a winning relay team. Robert Jolley, not to be outdone, took first in the 100, 200 and javelin plus a relay leg. Jolley had a throw of 175 feet 11 inches to win the javelin. Bill Adamson won both hurdle races and was second in the long jump. Todd Simmons won the 400. Other first place winners for the Vikings were Rick Mayo in the pole vault, Rick Shumway in the discus and Kerry VanDyke in the high jump. In addition to Reynolds wins in the distance races, Blaine Maez and Greg Slager helped PG sweep both of those events. PG was scheduled to host Springville yesterday afternoon on the Viking track. The next home meet is set for Thursday, May 9, when Pleasant Grove will host the annual Tri-Cit- y Meet. Rodeo queen to be selected The Utah County Fair, 1985-8- 6 Rodeo Royalty will be chosen Saturday April 27 at the Utah County Fair Grounds in Spanish Fork. Starting at 1 p.m. will be the Queen's Tea moving on with Hor-semanship soon after. Awards to be given will be Queen, first attendant, second attendant, third runner-u- p and fourth runner-up- . There will also be special awards, horsemanship, personality and appearance.
