Show Carolyn's Kitchen Delicious and nutritious brown rice dishes By CAROLYN KURR WARDLE I have recently discovered how delicious brown rice is. Health experts are always emphasizing the benefits of whole grains because they are good sources of B vitamins and dietary fiber. Brown rice has all of these benefits plus it has a nutty flavor that compliments meat dishes and desserts. I substitute it for white rice in- all of my cooking because I prefer the flavor. Brown rice takes a little longer to cook but it is well worth the extra time. Try some of these dishes to enjoy its nutritious goodness. Fried Rice is an excellent way to use leftovers. Chop meat and vegetables of your choice to add to this economical dish. Use a nonstick cooking spray, to eliminate the oil needed for cooking. Spicy Rice is a tasty side dish to serve with pork. Apples, almonds and raisins make this accompaniment special. Brown rice can also be a delicious . Breakfast Cereal. Fried Rice 4 cups cold cooked rice 2 eggs V cup chopped green onion Va cup chopped green pepper 1 cup cooked meat andor vegetables, ground, chopped or sliced into small pieces Spray frying pan with nonstick spray. Saute green onion and green pepper until tender. Add meat and other vegetables and heat through. Add rice. Heat. Stir in eggs quickly. Season with 1 tablespoon of soy sauce and serve. Makes 4-6 servings. Spicy Rice Vi cup each chopped celery and onions 1 Tbsp. butter or margarine 18 tsp. each ground allspice and cinnamon Salt and black pepper 1 Tbsp. brown sugar 3 cups cooked rice Vi cup raisins 1 tart cooking apple, cored and chopped cup sliced almonds, toasted In large skillet cook celery and onions in butter until tender crisp. Stir in seasrnings, rice and raisins. Heat thoroughly. Stir in apple; remove from heat. Cover and let stand 5 minutes. Sprinkle with almonds. Makes 6 servings. Rreakfast Cereal '. 1 cup brown rice, hot or cold 2 Tbsp. raisins honey milk Place cup of rice in 2 bowls. Sprinkle each with 1 tablespoon raisins. Drizzle with honey. Cover with milk. Makes 2 servings. |
