Show w TURKEYS FOR MARKET Much complaint is being made about the condition in wTiich the turkeys are reaching the markets, end therefore we are printing tno .'ollowing letter, which has just oeen received by George Knutson, j ii. P. agriculturist, from J. H. Burt- ner, in regard to the matter: "Los Angeles, Cal., Nov. 19, 1 fo County Agriculturists and Turkey Tur-key Raisers: Last year I sent out a circular Vroni this office on the above subject sub-ject and have reason to believe that .uost of you gave attention to the .suggestions. I want to call your attention again ;o the fact that the only manner in w-hich you can secure top market lOi- your dressed1 turkeys is first ,o properly fatten them, then to Vroperly dress and pack them. This uarket does not require nor desire i hat the turkey bedrawn. The prop-..r prop-..r method of preparing theiu for the ,os Angeles market is to sever the artery in the throat, hang up by the .cut over a. barrel, and while they ;re bleeding, pull the feathers oil lry as quickly as posisble. Be care--ul not to take off the head or feet, .'in feathers should be carefully 1 icked without tearing the skin. The ..eads and necks should be wrapped in paper to keep the blood from the skin of the birds. The turkeys should he penned up without any food about 2 4 hours be-iore be-iore dressing. This will prevent food iroiu remaining in the craw, which. ( allowed, will sour and injure the cttality of the bird. Tack hens and toms separately, if possible, and different sizes in different dif-ferent boxes as much as iHissible. making not of any culls that may be put in. The wholesale prices in Los An-r.eles An-r.eles at this time are about the ime as this time last year, from 30 o 40 cents per pound. J. H. Bui-tner, Agriculi uri :t Hoom 503 Pacific Electric Pldg. |
