According to tho specialists of tho department of agriculture people, oven In stateB quarantined for tho foot-and-mouth disease, need have no fear of eating meat, provided thoy cook It thoroughly. Tho foot-and-mouth dls-caso dls-caso is not caBlly communicated to human beings through food, although milk from a diseased cow might transmit trans-mit tho disease to a human boing. In tho caso of milk, howovor, pasteurization pasteuriza-tion will render It entirely safe. Human Hu-man beings who do got tho dlseaso commonly got It from direct contact with a sick animal. It Is wisest, therefore, there-fore, for people to keep away from all animals huvlng tho dlseaso, unless they aro properly provided with rubber rub-ber gloves, coats and boots, and these nro thoroughly disinfected aftor each visit to tho animals. . In tho caso of meat, as in tho casa or milk, It must bo remembered that all herds which actually show tho disease dis-ease uro quarantined, nnd nolther milk nor meat from tho Blck animals can bo sold. Sixty per cent or tho meat used In this country Is produced In nearly 900 federally Inspected slaughtering and packing establishments locatod in 240 cities. In these establishments no animal is slaughtered until It has passed an ante-mortem Inspection and also a most rigid post-mortem Inspection Inspec-tion by a veterinarian at tho tlmo of re ' slaughter. Arter slaughter its meat cannot leave tho establishment until It hns been carerully examined and stamped "U. S. Inspected nnd Passed." In all these establishments no animal showing any symptoms whatever of foot-and-mouth dlseaso Is allowed to go to slaughter, and no meat which, on post-mortem Inspection, sIiowb any suspicious sus-picious symptoms of this complaint can be shipped out of tho establishment. All meat suspegted of coming rrom an animal suffering with this complaint is sent, under government seal, to tho tunks to bo rendored into fertilizer. The federal inspection stamp on meat, thoreroro, means that It is entirely safo, Tho redoral government, howovor, has no Jurisdiction over local sluughter houses which do not ship meat outsldo or tho Btato In which it Is slaughtered. U, however, meat Horn such an anlmnl did eBcapo from ono or these local slaughter housos, which nro purely under un-der state or municipal control, all danger dan-ger or Its communicating the disease to human beings would bo removed when It Ib thoroughly cooked nnd sterilized. ster-ilized. Those who nro located near an lnrectcd region and wish to bo absolutely ab-solutely certain or tho sarety or their meat should cook It thoroughly. Tho dlseaso when contracted by adults Is not at all a sorloua Illness. It commonly takes tho form or slight rovor sores in tho mouth and n Blight eruption on tho fingers. In tho caso of small or sickly children, It may take a moro sorlouB rorm, especially U complicated com-plicated by othor illnesses. |
