A MOUSSE or parfalt makes a most refreshing dessert and it needs less time In preparation than many-frozen many-frozen dishes. Apricot Sherbet. Take one can of apricots, heat and drain off the sirup. Put the fruit tiirough a ricer or sieve and add one-half one-half cupful of heavy sugar sirup with one pint of thin cream. Freeze in vacuum freezer, stirring three times during the 45 minutes of freezing. Pomono Frappe. Make a sirup of one and one-half cupfuls of sugar and four quarts of water, boil 20 minutes. Add one quart of sweet cider, two cupfuls of orange Juice and one-half cupful of lemon juice. Cool, strain and freeze to a mush. Sicilian Sorbet. Tress one can of peaches through a sieve, add one cupful of sugar, two cupfuls of orange juice, two table-spoonfuls table-spoonfuls of lemon jtiice, mix and freeze. Grape Frappe. Cook together four cupfuls of water and two cupfuls of sugar for 20 min- utes ; add two cupfuls of grape juice, two thirds of a cupful of orange juice and one-fourth cupful of lemon juice. Freeze as usual. Cranberry Frappe. Cook one quart of cranberries, or use one quart of the canned fruit, eight minutes, then force through a sieve. Add two cupfuls of sugar, two cupfuls of water and the juice of two lemons. Freeze to a mush. Serve with any game or fowl. Concord Cream. Mix one pint of cream, one and one-fourth one-fourth cupfuls of grape juice, one-third of a cupful of sugar, two to three ta-blespooufuls ta-blespooufuls of lemon or lime juice. Freeze. Serve with whipped cream topped with chopped pistachio nuts. One, Two, Three. Take one lemon, two bananas and three oranges. Extract the juice of the lemon and oranges, put the banana through sieve and add one and one-half one-half cupfuls of sugar with one quart of thin cream. Add a pinch of salt and freeze as usual.
