I I ' | | I I One of my favorite food memories from Christmas is, believe it or not, not chocolate, but oyster stew! Every year my mom would make the most wonderful oyster stew ar\d I never knew why or how the tradition got started — so this year I asked my dad why we ate oyster stew every Christmas Eve. Apparently my greatgrandmother went to California one year when she was young and tasted oysters for the first time in her life. She loved them! Oyster beds are limited in Utah, and they were quite hard to find in the stores — not to mention expensive. So as a special treat they would splurge on Christmas Eve and make oyster stew. We ate oyster stew every Christmas Eve until I was in my late teens until one year-my brother and sister, who didn't appreciate the subtle tones of oyster stew as much as I did, voted to change the tradition. That year we had pizza — it wasn't the same. Silly teenagers. Don't get frustrated at this recipe just because it doesn't have specific measurements. I can't help it — this is a recipe that has been handed down for generations and it isn't going to change anytime soon. Trust me on this, it tastes wonderful. ' Oyster Stew I Depending on the amount of people that you are feeding: I 1 or 2 cans of oysters and its juices (We prefer the Cove Oysters) | A big glob of butter (The more you like butter, the bigger the glob - as per my father) I Milk-Whole (preferably) or 2% I I ' I Pour the oyster and juices into a pan, and on a medium heat, add the butter and pour in enough milk to taste and/or to feed however many people are staying for dinner. Add salt and pepper to taste. My mom prefers to have it thinner and more soup-like, but my dad pre| fers it to have it a little thicker. If you prefer it thicker, add a little bit of cornstarch or flour to thicken it up. | This is so much better than pizza! We loved it so mucf), we've made it every year. If s good all year round, but it has a greenish color that lends itafestiyefeel. Preheat oven to 350. Blend all ingredients in mixing bowl. Then in separate bowl mix together 1/2 cup sugar, 1 tsp. cinnamon, 1/2 walnuts or pecans. Pour half the batter into greased bundt pan. Sprinkle with half the sugar mixture, then layer with rest of batter and then sugar again. Bake 50 minutes or until toothpick inserted into center comes out clean. Ifs a fast, easy appetizer to prepare if you have company or n^ed to take something to an event. . Shrimp Cocktail Cream Cheese Dip ' 1 Tbsp. Worcestershire sauce I 1 Tbsp. green onions, finely chopped 1 8 oz. cream cheese 8 oz. cocktail sauce 1 can cocktail shrimp . | Mix the Worcestershire sauce, green onions and cream cheese together until well-blended. Spread tis mixture out on a plate. Spread a layer of cocktail sauce on the cream cheese layer. Top with the shrimp. Serve with crackers. (You can go easy on the cocktail sauce and shrimp. I usually don't use the full 8 oz. of cocktail sauce or , the entire can of shrimp. It just depends on how you like it.) | I . I . ' i ' CHEESE BALL from Chelsea Miller This cheese ball is a conversation piece. We enjoy munching, talking and just being together through the holidays. Roll the following ingredients into a ball with crushed walnuts and chill.
