It has something to do with the shape of the stem end I under stand the male is sometimes bitter and it's wise to get the female if possible — Cathy Smith Sinking ' Spring Pa A There are male and female eggplants and you might want to select a male not because it would be less bitter but because it might have fewer seeds But don't look on the stem end look at the opposite end which contains a small scar The female has an oval scar the male has a round one Good eggplants should not be bitter so choose them carefully Elizabeth Schneider in Uncommon Fruits and Vegetables suggests the following: "Be vocal about demanding absod shiny lutely smooth egplants They are highly perishable and once they show flabby bronzed dented or pitted areas you can be sure they are bitter When you press an eggplant it should feel firm the flesh should dent but bounce back If the indentation remains you have an overmature specimen Finally check the fuzzy green caps and stems which should be tightly intact and mold-fre- e As for storing eggplants don't They deteriorate in the cold and the heat Try not to purchase more than a day or two in advance and keep in a cool not cold place in a plastic bag" If you still think your eggplant is going to be bitter you can treat it with salt before proceeding with your recipe The procedure will leach some of the liquid from the eggplant Cooks differ as to whether or not salting will attenuate the bitterness but you can try it Margaret taut-skinne- DEAR HEMS& Is it possible to freeze eggs?
