H Taylor 83 Canyon road Heres Here's Pioneer Pione r Recipe ReciPe For New Years Year s Dinner Dinnen By MARY JUDSON In pioneer days ham made one of the staple dishes for large families in the west and so recipes were were developed and per per- to make the most of ot th e S delicious home-cured home meat Noted for her good cooking i is Mrs Phebe Clauson Taylor who lives with her son Lawrence II H Hi Taylor at 83 Canyon road She was born and has lived all her life in i Salt Lake City t Mrs Taylor who w was a s the daughter of Hyrum Clauson secretary to Brigham Young loves to describe the customs customs' of her childhood days in Salt Salt Lake City She especially enjoys enjoys' telling how children used to go go up the canyons around the cit city in search of ot spruce gum which was the pioneer equivalent ot or modern chewing gum Mrs Taylor famous for her excellent recipe for baked ham hand has given it to us as a old new-old idea for a New Years Year's dinner t BAKED HAM j Select lean ham 12 to 14 pounds add cold water and cider ci cider ci- ci der equal parts Let soak skIn side up overnight Scrape and trim off objectionable parts of or knuckle Cover flesh side with willi dough made of flour and water and put in baking pan with skip skin ski side down Bake about 5 hours No basting is necessary with ham covered with dough Remove Remove Re- Re Re-j Re move dough from ham and peel off skin side sprinkle with sug sugar j jar ar and roll In bread crumbs and bake again for about 30 min min- utes f- f r f Hot Hot Horseradish S Sauce uce Vi 74 cup freshly grated horseradish horse horse- horseradish radish U v cup cracker crumbs 1 cups milk 3 tablespoons butter t s If teaspoon salt 8 1 teaspoon pepper 1 tablespoon sugar 2 tablespoons lemon juice Vz tablespoon onion juice Cook crumbs horseradish and milk in double boiler for 20 minutes mini min utes then add lemon juice and other ingredients stirring slowly slowly slow slow- ly and constantly Cool and serve Sweet Potato Croquettes 2 cups hot raced sweet potatoes potatoes po po- 3 tablespoons butter J 2 Few grains of pepper 1 egg beaten well 14 to 1 cup of cornflakes Mix ingredients in and if too dry add more milk hot Make into shaped egg-shaped cr cra j and roll in crumbs made of the cornflakes and then in egg batter then in cornflakes then in egg batter again fry in deep fat and drain on paper Arrange around baked ham |
