Ottesen Meal time sure rolls around regular, doesn't it! It seems that I just get through with one meal, get things cleared away, dishes washed, etc. and it's time to begin preparations for the next one and isn't it wonderful! I know, there are times when we think, or even say out loud, "Gosh, I sure could save a lot of time and money if we didn't have to eat." It is something that we sort of take for granted and it does take up a good portion of our time, but I \! Covering what matters most, sure wouldn't want to find out what the alternative would be like. It is a blessing to have a job and to be able to spend money on food for our families. It is a blessing to live where we have access to grocery stores that are filled with a variety of foodstuffs. It is a blessing to have a home with a kitchen and a stove to prepare our meals. I remember when our troops went into Iraq, and took over the city of Baghdad. Many of the people in that country didn't know what was going to happen and some of the Kurdish people went into the hills seeking safety. On TV one night, it showed i some of them trying to cope with a minimum of shelter and the women trying to prepare food for their children. They had a small fire going. I couldn't tell what they were cooking, but it didn't look like very much. I remember one woman who was scantily dressed bending over the fire and stirring something in a small kettle while the children looked and waited. And I thought to myself, "I'll never complain again about having to prepare a meal. I have a home, a kitchen with a stove, I have utensils to cook with and money to purchase food.' Letters to the Editor Air pollution problem We take pride in our growing city of Spanish Fork. As spring approaches and the grass begins to show through and the mountains show their peaks, you take in a nice breathe of air. Ah, breathe in that pollution. There's nothin1 like fineparticle soot in the morning, right? According to The U.S. Public Interest Group in a report called "Plagued by Pollution" in 2004, Utah had the most fine-particle soot to surpass health-based national standards. In an article by Judy Fahys in the Salt Lake Tribune, it states "[Utah] also had the highest onetime reading, nearly double the level allowed by the U.S. Environmental Protection Agency." Shocked? I was. I thought at least California would beat us. In a report by Chicago State University called "Dirty Skies," fine-particle soot can cause asthma, heart attacks, and even premature death. Are we doing anything to stop it? How often do you drive? Any more than needed? What do you call a need? Could you cut back? Probably. What can a resident of Spanish Fork do to help air pollution? Let's start by doing the small and simple things, for what we do in our todays will forever affect us in our tomorrows. Kirsten Reimchrissel* Spanish Fork |
