Show Nutritionist Urges Use of Apples in Regular Diet An apple a day may or may not always keep the doctor away, but it should keep the pill box away and help to keep the family health-y, health-y, especially IX the fruit is thoroughly thor-oughly washed and the skins are left on, says Elna Miller, extension nutritionist of the Utah State Agricultural Ag-ricultural college. The apple is a Utah product; it is inexpensive, is accessible most of the year and has a variety of uses. Eaten raw, the apple gives the teeth some necessary exercise and polishing. White apples have some mineral content; they are more valuable for their type of cellulose, which adds needed bulk to keep the food moving along the digestive tract In a non-Irritating manner, Miss Mil-ler Mil-ler points out. The apple is one of the most versatile ver-satile foods; Tis easiest way to serve it, and perhaps the most nu tritious way, is to give it a the. -ough bath and eat it raw. However, for those who like a greater variety varie-ty and more work, the apple may be served for any course of the meal, for any meal of the day. Apples Ap-ples have their place in cocktails, salads, with the meat course, for dessert; and cider has many possl-biliites possl-biliites for delectable drinks. For a cocktail, select apples which keep their shape When cooked Rowp Beauty, Delicious, Jonathan, Pear-main Pear-main and winesap are in this class. Balls may be cut from the apples by using a baU-cutter or a small measuring spoon; or the apples may be cut Into cubes or triangles tri-angles and cooked in a thin syrup until transparent. Coloring may be 'added if desired. Cider punch, made from the following fol-lowing recipe, recommended by Miss Miller, affords a good variation. varia-tion. 4 cups sweet cider 4 tablespoons lemon juice 2 tablespoons sugar 3 sprigs crushed mint leaves or 1-4 teaspoon mint flavoring.
