Show Among TJ.SU.A. suggestions for conserving sugar are the recommendations recom-mendations that canned fruit be packed with little or no sugar and sweetened upon opening, and that the use of less sugar in freezing whole fruit makes for a better product. To can fruit with less sugar than usual, the fresh fruit should be cooked in an open kettle to draw out the juice before putting put-ting it into the jars. Corn syrup or honey may be substituted for up to one half the suger without affecting affect-ing the flavor. The use of one part of sugar to three parts of fruit for frozen pack is sufficient. |
